Which vegetarian food will u serve in your own restaurant?!

Question: I wish I had a choice in the restaurants around here. All of the vegetarian/vegan restaurants in my area are Chinese or Vietnamese. I am so sick of that.

If I opened a restaurant it would be all vegan and international cuisine. We would have American favorites, Italian pasta dishes, Indian food, Sushi, Mexican, Thai, Carribbean, Middle Eastern. And we would also have a section of the menu that states what is soy-free, gluten-free, wheat-free, nut-free, diabetic-friendly, and so on. That restaurant would be great.

Would you visit?

My fav. would abe a really easy grilled eggplant sandwich. So good! - if you want the recipe let me know.

I agree with Kyle W. I too would have a international affair of foods. and I would have the bestest and fresh and local ingrediences!

I love Thai food, but I also love Greek. - ther eis so much of a choice.

Vegetarian food, not vegan? So I can use dairy and eggs? I can do that. A nice menu:

Salad greens w/ raspberry vinegrette & feta cheese
minestrone soup with grated parmesan
Spinich & Cheese ravioli in a marinara
peach sorbet

You can make tons of vegitarian food, and contrary to someone else's posting here, it's less expensive, simply because you don't use meat as the base. Nothing is cheaper than rice and beans...you can make great entrees from these two key ingredients, and they provide the right nutrition. A lasagne without meat is just plain cheaper...

Anyway, I think you could do a lot of various cuisines with vegetables, and do it well...again, as long as you don't have to go vegan. I don't know how I would do that without cheese!

I am a vegetarian so I would want pizza,salad,pasta w/ sauce,bread sticks, corn,or pancakes.

For some reason, I really got into this...

- I'd have two really good, creative soups each day, a small pizza of the day and a panini of the day.
- A crostini plate with white bean puree, olive tapanade, sun dried tomato pesto (vegan).
- Giant portabella mushroom stuffed with garlic spinach and herbed goat cheese
- Fresh tomato bruscetta (vegan on request)
- Tomato and buffalo mozzerella salad
- Spinach salad with pear, gorgonzola and walnuts
- Antipasto plate (breads, roasted veggies, frittata, olives, cheeses, roasted garbanzo salad, etc)

- Wild mushroom ravioli with an herbed cream sauce
- Spinach and ricotta lasagne
- Asparagas risotto
- Eggplant parmesan
- Roasted vegetable napolean (layers of roasted veggies with ricotta and herbs, topped with a fresh tomato sauce)
- Spring vegetable frittata
- Farfale with pesto, broccoli, black olives and toasted pinenuts (vegan)
- linguini in marinara (vegan)
- Homemade ravioli of the week (sometimes vegan).

- Sides: Stuffed artichoke, sauted spinach, sauted wild mushrooms, grilled asparagas, rosemary roasted potatoes, baked 5-cheese mac-n-cheese, linguini and marinara

I would NEVER serve vegetarian food in my own restaurant... it costs too much to prepare, it takes too long and there is no profit in it.
