Nice idea for a veggie lasagna? would you have a recipe?!
1 large red onion(sliced)
2 very large mushrooms(cut into chunky pieces)
i red pepper(sliced)
1 orange or yellow pepper(sliced)
1 green pepper(sliced)
1 courgette(chunky slices)
6 medium sized tomatoes(halved)
i small butternut squash(small chunks)
olive oil(or sunflower)
1 clove of garlic crushed
sheets of lasagne
soya milk(or milk)
soya spread(or butter)about 100 grams
white flour
salt & gound black pepper
1 teaspoon of mustard
put all the veggies in a roasting pan, add garlic to oil and drizzle over the veggies.
roast in a high oven for 40 minutes.
white sauce
melt spread in a saucepan, add flour and make a paste, then gradually add milk till a smooth consistency, season with salt and pepper and stir in mustard
use a deep glass ovenproof dish(like pyrex)
put a layer of veggies, then lasagne, then sauce and keep layering until all ingredients used, finish with sauce on the top!
put back in oven for approx 20 minutes, you can add grated cheese on top if you like!
havent put measurement for flour and milk, just add gradually until consistency is right, thick but able to poor out of pan!

All I do is put veggies (broccoli, mushrooms, carrots, onion, peppers, whatever you want (cut the carrots fine or shred them)) in the spaghetti sauce and cook. Then, assemble the lasagna the way you normally would. Yum!
This might not be what you had in mind, but it turns out really well. During the summer when I'm overwhelmed with zucchini, I just replace lasagna noodles with sliced zucchini, and layer the ricotta and mozzarella with homemade spaghetti sauce etc, like regular lasagna. No meat, of course.
sauce:
diced tomato
tomato paste
chopped onions & garlic
rosemary
thyme
sage
oregano
a small amount of fennel seeds and red pepper flakes
red wine
( sauté onion and garlic until soft, then add wine to de-glaze pot. add aromatics and tomatoes, simmer)
filling:
sliced zucchini
eggplant
mushrooms
mozzarella cheese
parmesan cheese
noodles of your choice, i like spinach noodles or noodles you don't need to boil first, it's much easier.
i personally don't like using cottage or ricotta cheese as everyone does because it adds no flavor. it's up to you but you can even broil the eggplant before layering. you could do it while the sauce is simmering ( about 30 min). it may be more work but it will take some of the bitterness away from it and add a deeper flavour. be generous with the cheese in between layers. bake covered with foil at 350 for approx 45 min, then take off foil and brown top for 10 min.
make sure to let it cool before cutting.
trust me this is a REALLY good recipe. whenever i make it it's gone fast. it sounds simple but it really good.
i had a really good veggie lasagna with eggplant once... don't have the recipe, but i'm sure it wouldn't be hard to throw together...
