You could make some vegetarian sushi! Once you get making the sushi rice down, the rest is pretty easy. Look into it, I'm sure you will find something good and exciting!

There are thousands of things you could be making. You could make a fritatta, you could make vegetarian chili, you could make hummus, you could grill portobello mushrooms and make burgers... you name it.

Look for a cookbook called "How To Cook Everything Vegetarian." I'm not even a vegetarian, but I cook from it at least once a week.

Pizza or a casserole.

Well one, stop eating fries. Most are made with "natural beef flavour". Which means you're eating cow. But you can go on websites like vegweb.com and look up recipes for a bunch of different stuff! I hope you find something that you like. :]

they have some lovely easy recipes, some lovely bakes and stews and salads, also some lovely puddings.
they have salads aswell, you might get some new ideas!

You could make an easy vegetarian soup and have veggie sub sandwiches (on Kaiser rolls or hoagie buns). That's quick, easy and filling.
You could also prepare Hispanic food - veggie fajitas, black bean tacos or burritos, quesadillas, Spanish rice, chips and salsa, tostados, deluxe nachos etc. If you want to add more than veggies, look into the veggie "ground beef" substitute. It takes on flavors really well!
Homemade pizzas are always a good option - you could buy a bunch of ingredients and allow your friends to top pita bread with whatever they'd like. Everyone has their own personal pizza with great veggies - and substitute pesto (green or red!) for the pizza sauce for a different taste.
Vegetable stir-fries are easy. I like using brown rice or quinoa, tofu and a package of the frozen vegetables that say "Asian Medley" or "Stir-fry Vegetables". That is really fast and easy.
I know you said that you're tired of pasta, but you could always try some spinach lasagna with wheat noodles.

Smoothies! 2 cups of soymilk and some frozen fruit mixed in the blender, if you're not vegan you can add honey. Fried rice is a good main dish. Boca chicken patties with lettuce and salt and pepper wrapped in soft burrito wraps or do a veggie wrap like subway does, those are good too. Artichokes and chickpeas together make a good salad.

Try Eggplant Parmesian it's really tastey or Clam Chowder. I know alot of Vegetarians, belive me they love Chowder/
