What happens if seeds are heated or frozen???????????!

Question: What happens if you heat up seeds in the oven for couple of hrs./what about if you free them them. [this are two different sets of seeds]

Doing a science project, and having trouble finding anything online. If anyone finds it, would greatly appreciate it if the link or book is listed. :)

If you heat seeds, their nutritional properties (fats and proteins) are essentially destroyed. If you freeze them, they just wait until they are thawed to go back to work.
