Fried Green Tomato recipes anyone?!

Fried Green Tomatoes
INGREDIENTS:
* 4 to 6 green tomatoes, sliced 1/4-inch thick
* salt and pepper
* flour for dusting
* 2 eggs, beaten
* cornmeal or bread crumbs
* bacon grease or vegetable oil
PREPARATION:
Salt and pepper the tomato slices; dust lightly with flour. Dip slices in beaten egg, letting excess drip off, then coat well with meal or crumbs. Fry in hot grease or oil until browned, turning gently (about 3 minutes each side).
Keep warm in a low 200° to 250° oven if frying in batches.
Classic Fried Green Tomatoes
INGREDIENTS:
* 4 to 6 green tomatoes
* salt and pepper

PREPARATION:
Slice the tomatoes into 1/4 - 1/2-inch slices. Salt and pepper them to taste. Dip in meal and fry in hot grease or oil about 3 minutes or until golden on bottom. Gently turn and fry the other side. Serve as a side dish - delicious with breakfast!

It more about how you cook them cause you only need self rising flour & a little milk, no salt!. The self rising already has salt. Some people use corn meal I don't care for it, and if you use an egg batter it takes away from the tomato flavor. I use peanut oil or you can use canola.
Ok important to slice them thin(a mandolin works best) and absolutely no pink, yellow, or red on the tomatoes. They have to be 100% green, the bigger the better. Moisten the slices with the milk(so the flour will stick), roll in the self rising flour. Let them set there about 30 minutes. Heat an iron skillet and add about 1 inch of oil. Important don't cook them on high but not on low either, more like med high. You want them to brown good without burning!!!!!. It takes a little while so the will be crisp. Drain on one of those with rack not paper towels! They are good with fried pork chops, mashed potatoes, gravy & biscuits. Or fried Chicken or just an all veggie supper.
You can make fried green tomatoes with a fresh tomato salsa or with a corn relish
1/2 C of All-purpose Flour
1 T of Black peper, Cumin and Cayenne
3 T Salt
Take one egg, 1 T of Melted butter and a 1/4 C Milk and beat together. Most people like to make O cuts I prefer wedges so you don't waste any of the delicousness. Just cut the top off....
Gently roll the tomatoes in the egg mix and dredge w/flour mix. Do them one by one and stack on a plate. Get a pan hot, but not smoking hot.... cook on each side until golden.... yum
