Vegan Coconut Ice?!


Question: My friend is vegan, and we are wondering if anyone knows a recipe for coconut ice that is suitable for vegans.
Is it ok to substitute the condensed milk with soya milk or wouldn't this work?

INGREDIENTS
400 g white sugar
155 ml water
5 ml vanilla extract
125 g flaked coconut
2 drops red food colouring




DIRECTIONS
Line a 7 x 7 inch pan with parchment or waxed paper. In a medium, heavy-bottomed saucepan, heat sugar and water gently, without boiling, until sugar has dissolved. Then, bring to a boil and cook until it reaches 240 degrees F/120 degrees C on a candy thermometer, or a little syrup dropped in a glass of cold water forms a soft ball.
Remove from heat and immediately stir in vanilla and coconut. Continue stirring until mixture begins to thicken, 5 to 10 minutes.
Pour half of the mixture into the prepared pan and level the surface with a knife or spatula. Tint the other half of the mixture by stirring in the food colouring. Pour the pink mixture on top of other layer, and level the surface. Press all down firmly with the back of a spoon and allow to harden. When firm, turn out of the pan, remove the paper and cut into squares with a sharp knife.

You can make coconut pyramids with egg whites and rice flour.
I myself am about to experiment with this I love coconut treats we are using rice milk or soya as substitute and my partner gets wheezy if he consumes cows milk or wheat.

COCONUT PYRAMIDS

4 egg whites
100g/4oz Desiccated coconut
100g/4oz Caster sugar
100g/4oz rice flour
5 glace cherries

1. Mix together coconut, sugar, and rice flour.
2. In large bowl beat egg whites until stiff.
3. using a metal spoon fold the coconut mixture into the egg whites.
4. Place a teaspoon of the mix in little pyramids on oiled baking tray.
5. Cut cherries in half, placing a piece on each pyramid.
6. Bake in a pre-heated oven for 20/25 minutes gas mark3
170 degrees C/ Fan 150C/325F

No milk needed.

You can use the soy milk.

I don't know how to make it but there is a wonderful product at the health food stores here in the Pacific Northwest called Luna and Larry's Coconut Bliss, from Eugene Oregon. Their website is Coconutbliss.com (hope nobody thinks this is spam for me putting this in.) It is in a white pint ice cream tub with Ganesh the elephant god on it. All it contains is organic coconut and organic agave syrup, (and the flavor, cocoa, or coffee, etc.) so it is probably easy to make if someone knows how to make ice cream. It is kind of expensive but a little goes a long way. But it is totally vegan, as well as good for people with milk allergies. It doesn't have all the junk that is in non dairy ice cream. It is delicious! If it was cheaper I would weigh a ton.
