You need to have a good base of ideas of what you can cook instead of meat. Here is some of what I do:
Home made pizzas
You can put whatever you want to on them:
Mushrooms
Capsicum
Capers
Olives
Feta (unless your vegan)
Beans
Fresh tomato
Herbs
Chilli!
Anything mmmm
I have:
Mexican night - tortillas or tacos with chilli beans
Italian Night - yummy pasta or home made pizza
Middle Eastern night - falafels or filo pastry
Thai/Chinese night - stir fry/tom yum soup (without the prawns)
Indian night - vege curry!!
Euro night - vege sausages and mashed potatoe and peas.

Well cut down meat gradually, I've been a veggie for 28 months, Include more pasta and veggies in your diet. Then decide what type of veggie you want to be, whether you want to cut out all meat, not cut out seafood or fish....etc..Good Luck!

cool, I love vegetarians (even though I'm a meat-lover myself)!
maybe you should start with some tasty salads. Rachel Ray knows a lot of good salad recipes (if you like Rachel Ray lol).
I heard that you give up red meat but still eat chicken, fish, and maybe a little red meat.
Then after a week you completely get rid of red meat and chicken.
Then after two more weeks, get rid of the fish.
I quit everything at the same time though, which isn't good for me.
edit: also watch animal cruelty vids. I was surfing the net and somehow I found an animal cruelty vid and it just changed my thinking. I had never ever thought of going vegetarian. I actually sort of made fun of them in my mind (not out loud though because they're probably health freaks who excersice more than me and could beat me up).

Make a list of what you normally eat, then just cut the meat out of it.
Spaghetti and meat sauce becomes spaghetti with marinara (or ad some TVP to make it "meaty")
Hamburger or chicken sandwich becomes Boca burger/Chik'n Patty.
And so on and so forth.
Learning to cook is best thing you could do for yourself, you don't want to burn out because you're eating PB&J or bean burritos all the time. After a while, and I hear this from a lot of fellow vegetarians and vegans, you'll start to appreciate and enjoy all kinds of fruits and vegetables you didn't like before.
Learn to shop around and try different foods and products from the grocery. Some you'll like, some you won't.
Most of all, keeping reading, researching, and asking questions. Cook as often as possible; it's super fun and you get to eat afterwards :)

It was many years ago but I first stopped eating red meat minus spaghetti sauce. Then after thinking about it I went off everything. That took maybe 3 or 4 months. I had always said I loved animals but could never stop eating meat. Well i did and was over 22 years ago. About 10 year ago I went vegan. Occasionally it's hard to find something to eat, but that is rare.

Stop eating meat.
You can start off slowly by eliminating a certain type of meat within a given time period, or you can go cold turkey.
If using the first method, I suggest you eliminate at least one type of meat every two weeks. Or what ever time works best for you. Overall, I think this method is better because it will give you a feel for what you're doing. Sure its slower, but it's better than not trying at all. If you choose to use this method, try doing some exercises while eliminating the meat.
Example: Say you want to get rid of fish. Well before you do that, do some research on what type of nutrients fish contain, and then do some more research on what you can eat in order to replace the fish. This helps keep you healthy and safe.
I do not suggest the "cold turkey" method unless you have already done ALL of your research on this topic. Some people report feeling worse after going cold turkey. This can either be from lack of research or their bodies just weren't used to the change. I'm not sure which one it is, so be careful.

It really helps to find some delicious fake meat products that you can use in your favorite meals and recipes. My favorites are Nate's Meatless Meatballs, Tofurkey Deli Slices, Smart Bacon, and Morningstar Farms Meal Starters Chik'n Strips. You can find these products in most supermarkets and there are tons of options at stores like Whole Foods.

You can also eat Mexican, Italian, and more. If you go to a pizza place, choose something without meat, and at restaurants( or fast foods, get the point) you can ask to make it a certain way, so for example you go to Taco Bell then instead of meat they can put beans!

Yes, don't eat meat but substitute the meat with the processed tofu foods like soy dogs and Morningstar Farms products which are PROCESSED. You will want to end up eating much less PROCESSED foods and more fresh veggies.
Beans (in chilli are my fav now). Tofu in a fresh veggie stir fry too!!! Yum!
