How many types of tofu are there?!


Question: Too many. Hard, soft, lite, flavored, in water, shelf stable, cheese types and so many others. You really need to like the stuff. If you use it in place of meat it might soak up the flavor of the other things you cook it witl. I personally thing there are too many out there.
Mori Nu is a cheaper shelf stable type and will keep in your cubbord for over a year. ( yuck!)
White Wave needs to be refrigerated and only last about a month.

Two. Bad and worse....

There's varieties of tofu that come in water-packed trays, they go from Medium/Semi Soft to Extra Firm in texture.

There is silken tofu, which usually comes in tetrapak, but you can also get it in a water-packed refrigerated tray. Silken tofu also comes in grades of firmness, but it's texture is very different and unique.

There are also variations in how tofu is coagulated. Some need calcium sulfate, others use nigari or other coagulation agents.
