Vegan Vegetable Pot Pie?!


Question: I'm thinking about making a vegan vegetable pot pie.One of ingredients call for can of cream of potato soup.What can I use instead of cream of potato soup or is there brand I can use?(because from what I know..I don't think it's vegan)Also it has to be from a supermarket?Thanks a lot

hi, apart from the first answer all i could suggest was to make you own potato soup using soya milk! i dont know of a vegan potato soup in a can as i make all my own! sorry! :(

Cream of Potato Soup
Soup - Cream - -

INGREDIENTS

2 tablespoons oil
1 large onion, diced
2 cups water
3 medium russet potatoes, sliced thin
1 teaspoon dried parsley
1/2 teaspoon dried cilantro (optional)
1/2 teaspoon dried dill
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 cup soy milk

METHOD
In a small saucepan, saute onions until translucent. In a big pot, bring water to a boil and add potatoes, onions, herbs, salt and pepper. Reduce to a low boil and cook 20 minutes or until the potatoes are soft. Whip the soup in a blender until smooth. Return to pot on low heat. Add soy milk and adjust spices to taste. Heat through and serve.

  • Not knowing the other ingredients I would take a flyer and suggest you use soy milk.

    There is a great recipes for a pot pie in the website listed below.

    Maybe you can find a good cream of potato soup recipe or at least something similar that might work here: http://vegweb.com/index.php?board=426.0.

    There's quite a good recipe for an "Almost All-American Seitan Pot Pie" in the "Veganomicon" by Romero and Moskowitz. I've made it before, and while time-consuming, the result is very tasty and worth the trouble. The cookbook is also worth the price. I have yet to try a bad recipe from it, and I've made quite a few :).
