What should I cook (vegetarian dishes please)?!


Question: We're having a cast party tonight for the Vagina Monologues at an art gallery with a pot lunch dinner... what should I cook?! I prefer vegetarian things since I dont eat meat.

A very simple appetizer I like to make uses stuffed grape leaves "dolmathes" (obviously the vegetarian ones) and gourmet olives. The dolmathes can be bought canned or from the deli. Make a packet out of aluminum foil put in drained olives and dolmathes and a long peel of lemon and/or orange skin. Heat in oven about 25 minutes. Very tasty very simple.

depends on the weather, and is it finger food or sit down? If finger food I always go Asian- spring rolls, rice paper rolls, little curried pastry things etc. Vegie things on sticks with a nutty satay sauce...Easy to make and easy to eat.

If you're doing a sit down, I'd do a salad if the weather suits. My fave salad is a combination of cooked and raw vegies, fry up some potatoes in garlic with onion, garlic and diced vegie hot dogs or vegie bacon. Then, toss a salsa of diced tomato and corn (slice off the cob and carefully pick out the hairs) with fresh coriander and whatever else you want to put in it (I used to put fetta cheese in it when I still ate cheese). Mix it all together and dress with a mild soy mayonaise.

Or if you are in my hemisphere and it's cold, you can't go past a nice pie. I mix kumera (red sweet potato) with pumpkin (2:1 ratio) and boil/microwave until very soft. Then mash with soy cream cheese, a bit of nutmeg (go easy!!!) and sea salt, and a bit of ground coriander for spice. Bake your blind, pop the filling in, whack the lid on,sprinkle with sweet paprika for colour and bake until golden. Best thing about a pie is, as long as the filling tastes good the pie will taste good, so you can muck with your seasoning until its just right.
