Any Vegan recipies?!


Question: I don't eat any meat, fish, eggs, milk, cheese, or sugary stuff. I can eat vegetables, SOME fruits, beans, brown rice, and whole wheat tortillas. Thanks!

Hello there. Try some of these. I have made these myself and personally know they are excellent.

CURRIED SPLIT PEA SOUP (http://kylesveganblog.blogspot.com/2008/...

Ingredients
16 oz dried split peas
1 Tablespoon olive oil
1 medium white onion, diced small
2 tablespoons fresh ginger, minced
3 cloves garlic, minced
8 cups water
1 carrot to grate in at the end (optional)

Spice blend
2 teaspoons curry powder
1 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
2 teaspoons salt
generous pinch cinnamon

Directions
Saute the onions in the olive oil at medium heat for about 5 minutes. Add garlic, ginger and spices. Saute 2 more minutes.

Add the water and stir well. Add the splitpeas. Cover and bring to a boil.

Bring heat back down to medium, let soup simmer for about an hour, until peas are tender. Grate in the carrot and serve. You can garnish with fresh cilantro if you have it on hand.


TOFU "EGG" SALAD (http://kylesveganblog.blogspot.com/2008/...

1 14oz. or 16 oz. firm or extra firm tofu, drained and pressed
1/2 cup vegan mayonnaise (I use Vegenaise. It's truly amazing.)
4 tbsp. chopped fresh parsley
or
2 tbsp. dried parsley
1 pickle, minced
1-1/2 tbsp. prepared mustard i.e. the squeeze bottle kind
1-2 stalks green onion (spring onion), chopped (optional)
1 large stalk celery, diced
1-2 cloves garlic, minced
1 tsp. salt
1/4 tsp. turmeric


Crumble or mash tofu into a medium mixing bowl and add remaining ingredients. Mix together well and chill before serving.


SESAME NOODLES (http://kylesveganblog.blogspot.com/2008/...

Ingredients:

1/2 cup low-sodium soy sauce
3-4 T tahini
3-4 T sesame oil
1/2 tsp cayenne pepper
1/2 tsp ground ginger or 1" piece ginger root, grated
2 cloves garlic, minced
1 pound cappellini (angel hair pasta)
3 green onions, sliced thin, ends trimmed
1 large carrot, peeled and grated
sesame seeds and crushed red pepper flakes for garnish

In a small bowl, whisk together soy sauce, tahini, sesame oil, cayenne, ginger, and minced garlic until smooth, set aside. Cook pasta according to package directions and then drain in a colander and rinse in cold water to stop the cooking process. Give the noodles a few good strong shakes to get the water out. Pour noodles into a large bowl and toss with soy sesame sauce until well-coated. Stir in carrots and green onions. Serve sesame noodles with some sesame seeds and red pepper flakes and enjoy.

1 block of water-packed extra-firm tofu, drained, cut into 1 inch cubes, and marinated

For marinade I used:

Low-sodium Soy Sauce
Toasted Sesame Oil
Ground Ginger
Garlic Powder

The amounts of each ingredient are up to you and your taste

Spray or lightly coat a pan with olive oil over medium-high heat and brown tofu, flipping or stirring occasionally.


PEANUT SAUCE FOR TOFU (recipe taken from Vegetarian Times magazine):

1 cup smooth peanut butter
10-15 sprigs cilantro, chopped
3 Tbsp. sugar or sweetener
2 Tbsp. low-sodium soy sauce or tamari
2 tsp. apple cider vinegar
3 cloves garlic, finely minced
Cayenne pepper to taste

Whisk peanut butter with 1 cup of hot water in a large bowl. Stir in remaining ingredients until combined.

This sauce is not just great with tofu but is perfect for a vegetable dip or atop noodles.


RAW CREAMY CUMIN DRESSING (recipe taken from The Complete Book of Raw Food):

1 cup raw sunflower seeds
2 cloves garlic, peeled
20 sprigs cilantro
1 tsp. sea salt
3 Tbsp. lemon juice
1/8 cup flax, hemp, or olive oil
1/2 tsp. cumin powder

In a blender, thoroughly mix all ingredients with 1 cup of water until smooth. Dressing may thicken upon refrigeration, so add a little water when using later. It will keep in the fridge for about 2 weeks.

You know what you can do with these ingredients?

Cut up a medium onion, 2 green bell peppers, and saute them in a little oil on the stove until the onions are soft and kinda translucent stirring frequently, add hot sauce and stir even more, take off heat, and set aside. Make some brown rice and heat some beans (add salt and pepper to taste). Warm up a tortilla or two and fill with brown rice, beans, and veggie mixture, add extra hot sauce or vegan sour cream if you like.
