Recipes for veggie dips, besides hummus?!

Red Pepper Dip (Vegan)
Broil 2-3 large red bell peppers until the outside skin is balckened and blistered. Place them in a closed paper bag until cool enough to handle - this will loosen the skin. Remove the skin and seeds, place in a blender with 2 cloves of garlic, a squeeze of lemon, salt and pepper. Blend until smooth.
For a hotter, spicier version add hot peppers.
Buy Lipton's onion soup mix and either mix it into sour cream or silken tofu (but add a little lemon juice if it's in silken tofu). A fantastic onion dip in less than 1 minute. Literally a staple in my house. Other dry soup mixes work well too - dehydrated mushroom soup mix has also been a frequent favorite.

No real significance to me other than that I think it's gorgeous.
Try an eggplant dip. Go to food network and type in eggplant dip and see what comes up. Not sure of recipe but it had eggplant, lemon juice, etc and was pretty good.
in a saucepan cook 2 cups fresh spinach, when cooked remove all of the water and then place the spinach in a bowl for later.
Add 250g of creamed cheese to the saucepan and at a medium heat melt the cream cheese till smooth and creamy make sure you keep stirring so that it doesn't stick to the bottom.
Then add 1 packet of French Onion soup powder, ( the one that makes enough for four people) Stir it threw and then add the spinach.
and for a really nice plate for the dip use a Cob loaf of bread.
for the Cob loaf just cut off the top and remove the middle of the loaf but make sure you dint remove all of the bread, then add the dip and place it in the fridge for 30 Min's.
This way you dint have to use biscuits or chips you can use the Cob Loaf for the dip and when everyone is finished there is no washing up.
roasted asparagus tapenade
1 med head of garlic
2 tbl. plus 1 tsp. olive oil
1 lb. asparagus, trimmed
1/4 cup pine nuts
1 lemon, zested and juiced
bake the garlic in the oven for 45 min. at 375
cool- squeeze out garlic cloves
roast asparagus for 20 min. in oil
toss nuts in a skillet for 3 min
put everything in a processor, and process till smooth.
Or you can buy an avocado, and mix with already made salsa, and its avocado salsa, its yummy to!
