i'm a vegan...so i don't eat dairy products or meat, but i can still give you some good recommendations!
here's my favorite recipe websites:
1. this one has everything under the sun! cookies, pastas, salads, burritos, and they have vegan and vegetarian options.
http://vegweb.com/
2. this site has a huge list of super easy vegetarian recipes.

I also recommend buying tofurky for sandwiches (fake deli meat, tastes awesome i swear, and they have lots of choices!) This brand also sells tofurky sausages and hotdogs if you like that kind of thing.
You can also buy tofu patties (from the frozen aisle) for burgers...very yummy!
The key to being a successful and healthy vegetarian is learning how to cook with tofu! Watch the video at the link below...it teaches you all the important basics about cooking with tofu and its only a couple minutes long!

In addition to the Sarah Kramer books someone recommended ("How it All Vegan!," "Garden of Vegan," and "La Dolce Vegan"), I recommend "Conveniently Vegan" by Debra Wasserman. It uses a lot of "convenience items" you can find at conventional grocery stores.
However, I strongly suggest you learn to make your own seitan, as the packaged stuff in stores is overpriced and just AWFUL. You can get Vital Wheat Gluten in the baking aisle of grocery stores.
I also go to www.vegweb.com for recipes.
