I agree Skinny B*tch is a great book, my mom got it for me for Christmas!

Here is a quick and easy pasta salad that my roommate and I like to eat:

I made a vegan pasta salad that was a big hit recently at a pot luck party...

even by meat eaters! lol

I wont give measurements because you can use more or less as you like to taste, or additionalize... (plus I always cook kinda intuitivley!)

But get a whole grain pasta or spinich noodle...

Boil.

As you boil prepare bits of chick peas, cold and uncooked broccoli, sliced onions, maybe some corn (I used lots of veggies in my dish! And I am sure tofu would be good in it!)

Then drain and cool off the noodles and mix them and the veggies into an appropriate sized bowl or container... and I added a liberal amount of an Greek Olive Oil salad dressing, some lemon juice, garlic salt, oregeno and other fresh herbs to taste.

Pop in the fridge...

It's best after it has had a night to absorb all the lovely flavors!

That type of thing is good bc you can make large portions and munch on it for a while

Here's a very healthy & tasty recipe that has 24 grams of protein!

Tofu Scramble

1 box of Mori-Nu silken firm tofu, patted dry and mashed
1/8 tsp. turmeric
1 tsp. onion powder
1/2 tsp. salt
1 cup of your favourite vegetables such as broccoli, fresh mushrooms, onions, or tomatoes

Place the tofu in a lightly oiled sauté pan and cook over medium heat for 3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.

VEGAN "MEATBALLS"

> 1 package Gimme Lean (Sausage or "Beef" Flavor)
> 6 oz vegan burger crumbles
> 1/2 cup cracker crumbs (saltines)
> 1/2 tsp onion powder
> 1/2 tsp garlic powder
> 1/2 tsp dried oregano
> 1/4 tsp basil
> 1/4 tsp salt
> dash of pepper
> 2 Tbsp olive oil
> additional vegetable oil for cooking

Combine all ingredients in a bowl or electric mixer. Form into any size balls you like. Brown on all sides in oil. Continue heating until hot throughout.
