What is your favorite 5 minute veggie dish (not ready made)?!
Answers: My tummy says "Thank you for your answers"
pasta, cooked with a bit of pesto from a jar stirred into it. Or grated cheddar on top (with ketchup for the kids).
Slightly longer than 5 mins: cook the pasta till almost done. At the same time cook a sliced onion and crushed garlic if liked in a very generous slurp of olive oil, then when starting to soften add 2 tins of chopped tomatoes and some herbs, little sugar, or a couple of the Oxo italian stock cubes. Season with salt & pepper. Mix with the pasta and put it in a big oven tray. Grate cheddar on top, or break up a mozarella cheese and put bits on top. Put it all in the oven for half an hour or so till the cheese is melted and going brown.
I think Jamie Oliver did something similar with fresh basil, but I can't buy fresh basil near me, and my storecupboard ingredients did the job!

California Grilled Veggie Sandwich
4 servings
Ingredients
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese
Directions
1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
2. Preheat the grill for high heat.
3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches.

Avocado on French Toast
Per person you will require:
1 slice of bread
1 small egg (beaten and seasoned)
1/2 an avocado (skinned and mashed)
1 small tomato (thinly sliced)
6 thin slices of cucumber
2 or 3 roughly torn fresh basil leaves
Salt/freshly ground black pepper
Olive oil for frying
Add a little olive oil to a non-stick pan and bring up to a medium to high heat. Draw the bread carefully through the beaten egg to coat it completely on both sides but avoid breaking it. Fry it for 3 to 4 minutes on each side.
It is possible to mash the avocado straight on to the toast but I prefer to do it beforehand in a small bowl. Spread it carefully over the toast, add the cucumber slices and the tomato and season. Finish with a scattering of torn basil leaves and an optional drizzle of extra virgin olive oil.
