Food advice?!


Question: i am makeing a tart-esqe dinner that consistse of a potato crust and a filling containing mushrooms and tomatoes. the only things i can think of to put in to the filling is mushrooms. onion, garlic tomato sauce (a mix of grilled garlic tomatoes and tomato paste to thicken it up) peppers and squash (yellow).

can anyone think of anything to add or a different idea.
eggs and cheeses are okay.

Broccoli would be good.

maybe a little bit of pasta in there?

you can make it like a Philly cheesesteak style.. but without the steak. add sauted mushrooms, onions, peppers and whip up some eggs and make this into a quiche and then top with cheese. put under the broiler the last few minutes to make the top brown... don't forget the seasonings... like black pepper and worstershire sauce.. this will give it a "beefy" flavor without needing meat.

Ground Beef or Bacon
Celery, Onion and/or Garlic
Cilantro, splash of Tobasco sauce and/or Worcestershire sauce

Maybe zucchini...or eggplant...

Are you using a Mashed Potato Crust or a crust made with Potato Flour?
Sound delicious either way!
If anything I'd probably add some fresh Basil and fresh Spinach, and maybe some Asiago Cheese as a finish -- for protein and a flavor burst.
Of course you will season it all with Sea Salt and freshly ground Black Pepper?
Personally I'd avoid the Tomato Paste. I don't like its flavor much.
You might want to bump up the protein with some cooked northern or butter beans.

maybe add some sliced courgette and maybe some beans like kidney beans(even the tin ones are nice, especially organic!)

pasta, meat , parmesan cheese, garlic, greens peppers, cheddar cheeses sounds good may have to make it one day
