To make sure he gets enough fat, try feeding him vegetables cooked in olive oil--I'm sure you already know the benefits of olives, and this will give him lots of vitamins and calories that he needs. Or, you could steam vegetables and then put the oil on top, along with whatever seasonings your son likes.

For a tasty vegan treat, you could pan-fry some apple or pear slices in canola oil and sprinkle them with brown sugar and cinnamon: yum!

If you use tofu and soy stuff, you could fry some tofu or tempeh in healthy vegetable oil and spice it up with a sauce--the flavor will depend on what your son likes, lol.

If he doesn't have allergies, nut milks would also be ideal for him--avoid solid nuts, because there is significant choking hazard for infants and toddlers. Almond milk and hazelnut milk are very tasty--see if your son likes them! In addition, there are many soy-based beverage powders that contain lots of nutrients.

And then, there is peanut butter. For a snack, perhaps a banana cut in half lengthwise and filled with peanut butter--that might be fun for him! =)

my little vegheads really like veggie chili chalked full of every bean i can put in there, veggies like carrot, zuchinni and corn, plus yves veggie ground or the yves veggie balls. you can also add some brown rice to it. messy, but yummy. you could add some soycheese on the top too, for a little extra.

sweet potatoes
