Soup, rice and salads!!! Serve 4-5 or more attractive dishes!
Progresso lentil soup is very tasty, (or Campbell's tomato soup cooked with a pat of butter and 1/2 cup frozen peas tossed in at the start). Instant rice is easy, and a lightweight person can easily eat 2 cups cooked! Add a pat of butter to enhance flavor. Eat the soup over the rice. Salads could be yogurt with minced cucumber, S & P and paprika and chopped tomatoes and cucumber with a dash of olive oil, dill and S&P. For dessert, a biscotti, and 1/2 cup sherbet and a piece of fresh fruit.
Here are a few awesome links! Also, in a lot of recipes, you can just remove the nuts. As long as they aren't a central feature, it sure won't be an issue.
