How do you pick cabbage?!

Look at the stem, look for any coloring or cracking.

depends what color ur choosing cuz u know theres purple and green lol but its true. just pick the one that isnt all rotten or has black spots on it cuz thats how cabbage turns when it going nasty.

Hurl them one at a time at the floor. Buy the one that bounces.

Choose heads that are solid and slightly heavy for their size, with no holes, wilting, or discolorations.

With most produce like this, you should dig in the back of the pile. Early in the morning they move the oldest stuff to the front and put the freshest stuff in the back.

If you mean in the store-pick one with no marks or bruises & feels dense or solid. In the field-grab the head and twist.

Texture: the leaves are firm(not lifeless), the base of the plant (where it is cut) is not soggy but dry .

Smell : little or no smell (esp cabbage it gives off a nasty smell when it is rotting)

Appearance: No holes( holes means worms) and too many brown spots . or the leaves are too yellow (the veg has been there for ages)..

Firm and tightly wrapped by it's outer leaves. Be very careful about cabbages that are plastic wrapped. Cabbage likes to breathe even after it's been harvested. Make sure that the outer leaves are not discolored or slimy. When you get it home, take off the two outermost leaves and look at them. If they look good eat 'em. If they don't throw them out and feed them to your rabbit. As a general rule everything that's left is fair game! Dig in! Recipe: Shred, sautee in olive oil and garlic, salt, pepper, red pepper flakes (to taste) and cook until reeeeally soft! toss with some speghetti pasta and mixed veggies! Top with a light drizzle of olive oil. Oila! It is...Wow!

check the outer leaves for holes (this means bugs were eating it) and firmness. If the leaves are limp it is not fresh
Cabbage goes a brownish colour when spoiling, but in my experience they are one of the longest lasting vegetables in the fridge. It's not easy to buy a bad cabbage...

Well, it depends on what you want to use it for. Cabbage leaves tend to be smooth (compared to say - iceberg lettuce which is bumpy). Find a head that has smooth leaves that are not browning or curling up anywhere. The color will vary - sometimes the leaves are distinctly green, sometimes they are pale green. Either is acceptable.
Cabbage heads are dense....you are getting a LOT more than what you see on the outside, so be aware of that. If you only need a little, buy a small head.
