I need vegetarian, vegan recipes for collard greens, turnip greens, kale, etc.?!


Question: I was raised in the South where all these things are cooked with ham or bacon etc. Not exactly healthy. What can I do to them to make them taste good, especially so my children will eat them?

I usually saute them with garlic in sesame oil and add a small bit of soy sauce at the end. Or I'll use olive oil and add balsamic vinegar.

3 Japanese (baby) eggplants, halved
1 small red onion, peeled, halved, and thickly sliced
Olive oil, for brushing

1/2 pint grape tomatoes, washed and sliced in 1/2
1/4 cup chopped fresh dill, plus more for garnish
Sherry Vinaigrette, recipe follows

Cook farro in a large pot of boiling salted water until just tender, about 15 minutes. Drain well and place in a large bowl.
Heat grill to high. While the farro is cooking, brush the eggplants and onion slices with oil and season with salt and pepper. Grill for 3 to 4 minutes on each side or until just cooked through. Remove from the grill and cut into 1-inch dice. Add the eggplant and onions to the farro along with the tomatoes and dill. Pour Sherry Vinegar over the farro mixture and stir to combine. Garnish with additional dill. Best served at room temperature.


Sherry Vinaigrette:

1 small shallot, finely chopped
1/4 cup sherry vinegar or balsamic vinegar
2 teaspoons Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh dill
1/2 cup olive oil
Whisk together the shallot, vinegar, mustard, salt, pepper, and dill in a small bowl. Slowly whisk in the oil until emulsified.

Could you make them into a casserole, and instead of ham/bacon add some mushrooms and peppers and different types of beans like kidney beans/soya/aduki/black eyed beans.

I eat vegetables too.. Which have all the nice coated cancer causing substances too. Or maybe I should spend half my paycheck on "organic vegetables." MMmmm can vegans eat insects that burrow in those vegetables and fruit? You think that fake vegan S**** is really good for you? Last time I check how a vegetable burger is made I was amazed that most of it is powdered s***. Vegan stores are a rip off... Why is it so expensive? Why not make it cheap... Poor people cannot afford that kind of lifestyle. They have to resort to meat or pestacide infested vegetables/ fruit. Please take your face out of your a** and feel sorry for those in third world countries who benefit from eating meat!!!!!!!!!!
