Answers: what is a good vegetarian lunch i can take with me to work? there is no microwave
Hummus salad pocket with some roasted red peppers, hummus, spinich, and a side of grapes.
Make a vegan black bean chili. Follow a normal chili recipe and instead of beef add corn to the recipe. You won't miss the meat. This is great for a thermos or reheating at work.
Pita salads rock for lunch!
1 whole pita, cut in half
handful of your favorite lettuce
1/4 c red cabbage, sliced into strips
1 grated carrot
dash of black pepper
2 t Italian dressing
1/4 cucumber, thinly sliced
2 slices of tomato, sliced in halves
1/2 avocado, sliced or mashed
handful of sprouts
How about sushi, rice paper rolls, fresh bread and dips, rice noodle and vegie salad, mixed nuts, and home-made banana/fruit breads sliced and frozen to thaw on your commute.
You can make a wrap sandwich with hummus, cucumbers, tomatos or whatever veggies you like. If you eat dairy you can add in feta cheese too.
Another option is any type of veggie soup in a thermos, this goes well with the sandwich. YOu can always bring creative salads with different ingrediants like clementines, nuts, different veggies. Vary your ingrediants.
If you have a fridge I would suggest making a veggie noodle salad. Make it with green beans almonds, and your other favorite veggies with penne pasta. You can bring some dressing to put on later. And store in a plastic reusable container :)
I like homemade veggie subs. Sub bread and any veggie you can imagine you may want on some bread. If soggy bread is a concern, pre-slice everything and put them in baggies, dry veggies, i.e. lettuce, peppers...ect. can go in the same baggie. Tomatoes and the like separate baggie. Bread in another baggie, and put it together when you're ready to eat.

- Smoked Tofu: mashed with mayonnaise and fresh chopped parsley or sliced with beetroot and/or tomato, or sliced with salad.
- Braised Tofu: very well drained and dried, thinly sliced with salad.
- Avocado: mashed with curry powder and salad.
- Salad: with crisps, or with Bean Paté or with hummus.
- Banana sandwich
- Banana with honey sandwich
- Hummus and mixed peppers in pitta bread
- Grated carrot and shredded lettuce mixed with hummus in a toasted pitta.
- Cheddar cheese ploughman’s on thick wholemeal or white bread.
- Mushroom or chickpea pate with lettuce and cucumber in a roll.
- Goat’s cheese and sliced beetroot on a bagel.
- Cucumber, lettuce and quorn slices
- Free range hard boiled egg: chopped with mayonnaise, cress and mint or chopped and mixed with tomato purée.
- Date/raisin purée
- Banana: with brown sugar, with chopped nuts
- Honey with apple
- Chocolate/carob spread with hazelnuts
- Tahini with chocolate/carob powder stirred in and mashed banana
- Peanut butter with jam
- Peanut butter with banana
- Peanut butter and sliced pear
Try making a pasta salad with vegetables, and add seeds and pulses and whatever you think would go

You can get Yves veggie salami, add some mustard and bread and there! You have a sandwich! You can also get a tortilla, put hummus on it, add some peppers and cucumbers, and Viola! You have a hummus, pepper, and cucumber wrap!
Then you can pack a granola bar, apple, and a juice box with it.
