Favorite meatless recipes?!


Question: My husband is an omni and I am a new-ish vegetarian....I'm on my second round. I'm used to only having to cook veg meals for myself, not for a meat eater, too.

I'm trying to put some range in my husband's diet since he is under the impression that every dinner should include meat. I'm not trying to convince him to be vegetarian, but honestly I'm getting tired of having to modify recipes so that we each have a portion we can eat. I need some creative suggestions...obviously pasta can be made without meat....what other things have you tried?

Everyone I know loves falafel when they try it...omnivore and veg*n alike. You can buy boxed mixes that you just add water then form into patties and fry or you can make this at home

Ingredients
1 cup dried chickpeas (or canned, drained and rinsed)
1/2 large onion, roughly chopped (about 1 cup)
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh cilantro
1 teaspoon salt
1/2-1 teaspoon dried hot red pepper
4 cloves of garlic
1 teaspoon cumin
1 teaspoon baking powder
4-6 tablespoons flour
Soybean or vegetable oil for frying
Chopped tomato for garnish
Diced onion for garnish
Diced green bell pepper for garnish
Tahini sauce (sesame seed paste)
Pita bread

Preparation
1. Put the chickpeas in a large bowl and add enough cold water to cover them by at least 2 inches. Let soak overnight, then drain. Or use canned chickpeas, drained.

2. Place the drained, uncooked chickpeas and the onions in the bowl of a food processor fitted with a steel blade. Add the parsley, cilantro, salt, hot pepper, garlic, and cumin. Process until blended but not pureed.

3. Sprinkle in the baking powder and 4 tablespoons of the flour, and pulse. You want to add enough bulgur or flour so that the dough forms a small ball and no longer sticks to your hands. Turn into a bowl and refrigerate, covered, for several hours.

4. Form the chickpea mixture into balls about the size of walnuts, or use a falafel scoop, available in Middle-Eastern markets.

5. Heat 3 inches of oil to 375 degrees in a deep pot or wok and fry 1 ball to test. If it falls apart, add a little flour. Then fry about 6 balls at once for a few minutes on each side, or until golden brown. Drain on paper towels. Stuff half a pita with falafel balls, chopped tomatoes, onion, green pepper, and pickled turnips. Drizzle with tahina thinned with water.

We like lentils in our house for non meat meals.

We serve it over rice. And you can have a salad on the side.

Vegetarian meals that go over well with omnis are the dishes that don't have meat in them anyway. (I always avoid "fake meat" products for omnis.)

Spinach Lasagna, Eggplant Parmesan, and Ratatouille are always crowd pleasers. Serve with lots of crusty bread, and plenty of red wine, and no one will notice there isn't any meat!

Dal and chawal with achar and papad is the best

I absolutely love spinach lasagna. Here is a great recipe from Giada De Laurentiis' show. It is sooooo good!!

The recipe calls for prosciutto, but I always leave it out because it doesn't need it.

Mushroom Rogan Josh

large open mushroom, red onion, sweet pointed peppers, tin of tomatoes, tin of red kidney beans and a jar of vegan/vegetarian rogan josh sauce, served with rice,fresh coriander, poppadoms, and mango chutney!
really quick and easy and tasty! :)

Another one was Roasted Vegetable Lasagna

Mushrooms, courgettes,red/green/yellow peppers, red onion, butternut squash, sweet potato,cherry tomatoes!

white sauce and lasagna.

Potato Pancakes...rice garlic bread ..salad and for dessert creme brule

Mine is vegtable soup (my grandmommy makes the BEST)
