I have lots of onions to use up. I need a good easy lot fat Vegan recipe please?!

Fry up a pile of onions till they're as cooked as ya want, add ya bean selection, cook a bit more, add your sugar (around a teaspoon or two for one person portion), add your tomatoes (cook till like a juice or use tinned tomato), then add your paprika (2 teaspoons full for one person portion) and your garlic (as much as ya want!) and your mixed herbs (generous pinch of) and this should be nice enough I reckon. Ya could make a massive load of this easily, freeze it n eat whenever.

Peel and roast them.

Another vote for french onion soup here - but they last for ages!

Slice up the onions and put in pan, add enough vegetable stock to cover, simmer for 10 minutes, add another two ladles full of stock, simmer for another ten minutes and then keep adding stock and simmering until you have desired amount.

Add salt and pepper.
You can add chilli flakes to taste.

Add any other vegetables you have to spare for the last 10 minutes for variety.

onion soup is the best way to use them up :)

try a good salsa! chop them up with tomatos and throw in other veggies that you enjoy.

or you can roast them and serve them with mushrooms like burger

You could always stuff them and then roast them. Stuff them with b/crumbs, herbs, finely chopped onion (yes), garlic and if you have any sheese add that, mushrooms etc.

Or, roast them with some garlic, sweet potato, squash etc.

How about onion pie?!

If you have too many, maybe you can try pickling some for later use.

cook in a large pan with a bit of oil
once they have turned white, covr them in water and bring to boil. Then throw in some brown sugar (quantity depends on how many onions you use, if you are using several large onions I'd go with a couple of tablespoons).
Boil off water until thick and gooey. Use onions in sandwiches, pies, tarts etc. This process does preserve the onions, but I can't say for how long because I've only done it at work and we always used up a batch within one week

Bake them. Stuff them. Re bake them. Bob's your uncle!

i'd go with french onion soup every time, although traditionally it's supposed to have beef broth and cheese, it works fine with vegemite stock and without the cheese. ENJOY!

I served sauteéd onions as a side dish with most of my meals. You can also caramelize them to preserve them and use in casseroles casseroles or stews. Delicious if you make cheese toast and put a layer of them before the cheese.

Onion Bhaji

Onion Bhaji's are easier to make than you might think. This recipe came from the Uncaged website.
Ingredients

4oz gram flour
2 onions, chopped
1 tsp fresh coriander, chopped
? tsp turmeric
1 to 2 chillis (to taste), de-seeded and finely chopped
pinch salt
? pint water
Method

Mix all the ingredients except the water together, then add the water gradually until you have a thick batter (you may not need to use it all).

Deep fry in batches for 2-3 minutes, until golden brown.

Notes: You can make a large batch and freeze!
I love them! :)

These are good served on a bed of shredded lettuce with a wedge of lemon.

Vegan Stir Fry- olive oil, onions, tofu, veggies

Salad- lettuce, onions, veggies, lemon juice for dressing

Soup- Veggie broth, onions, veggies, noodles/rice

Veggie Burger- Chick Peas, onions, rice, veggies

Grilled Soy Cheese and Onion Sandwich- Bread, vegan butter, soy cheese, onions

Use them as a base for a curry sauce or a tomato/onion pasta sauce.

Put 1 cup of brown rice in a rice cooker with some olive oil(optional) and a cup of onions. If you have some garlic and fresh bell peppers then throw them in there too. Saute them for a while and then add 3 cups of water and let it cook. Add some powdered garlic, onion and parsley. Add salt to taste.
