The only thing is, you want to purchase cucumbers that are not waxed, if possible. You also need to wash them. Do not eat them without washing...

Unpeeled cucumbers are higher in nutritional value as fiber and vitamin A are lost by peeling.

of course you can eat a cucumber with the peel--that is what pickles are!! but, some people prefer the taste without. I like it with!

HELL YES!! there is nothing wrong with eating the skin. every other restaurant i have been to they serve their cucumbers with the skin on. most veggies like that its better for you. they even say the leaves on celery are good for you. you want to try and eat all of the vegetable as you can. i mean, when it comes to the top of a carrot or the root of an onion or the outside of an artichoke...that's an obvious "no" but you can definitely eat all of the cucumber without anything negative happening. it's just up to the person.

most veggies and fruits have the bulk of the nutrients in the skins. look at the color of a cuke -the whiter the veggie, the more water it contains.

way more vitamins with the skin on they are high in potassium, sulfur and manganese, cucumbers also are a great source of chlorine and silicon. Silicon is beneficial to anyone suffering with tendinitis.Also rejuvenates muscles and gives elasticity to dermal cell and so it's great for the complexion.

Most veggies and fruits have a stack of nutrients in the skin that are lost once they skin is peeled.

There is absolutely nothing wrong with eating cucumber with the skin on - in fact, I'm not sure I've ever eaten it without the skin!

It adds... crunch to it. And it tastes good!

But to answer your question, I'm pretty convinced they do have more vitamins/nutrients with the skin on.
