Hi i found these on the nasoya website, it seems it doesnt have to be cooked, and seems to have more uses for puddings than savoury.

Chocolate pudding.

1 1/2 lb Nasoya or Azumaya Soft Tofu
1/2 C oil
1 1/4 C sugar
1/3 C cocoa
1/4 -teaspoon salt
1 1/2 t vanilla

Preparation Method:
Blend in blender till smooth and creamy. Pour into individual serving dishes or baked pie shell. Chill until set and serve.

Stuffed Manicotti Florentine
1 (8 oz) package manicotti
1 (26 oz) jar spaghetti sauce
1 (14 oz) container Nasoya or Azumaya Soft Tofu, rinsed and patted dry
2 (10 oz) packages frozen chopped spinach, thawed and well drained
3 T fresh chopped parsley (or 1 T dried)
1/4 tsp salt
1/4 tsp ground black pepper
1 T grated soy Parmesan cheese

Preparation Method:
Cook manicotti according to package directions; drain.

Preheat oven to 350? F. Pour a thin layer of spaghetti sauce in the bottom of a large baking dish.

In medium bowl, mash tofu with a fork, then mix in the spinach, parsley, salt and pepper.

Stuff the manicotti with the tofu filling, and arrange in a single layer over the sauce.

Spoon remaining sauce over the manicotti and sprinkly with soy Parmesan.

Cover and bake for 35 minutes or until bubbly.

Uncover, bake 5 minutes longer, then remove from heat and let stand 10 minutes before serving.

Date and orange pudding

1/8 t salt
1/2 C frozen orange juice concentrate

I'm not a fan of the soft tofu. I prefer the extra firm. However, I think it would be best mixed in a fruit smoothie.

Soft tofu is best used in a smoothy, but you can also use it to make vegan pudding, salad dressing, etc. For recipes you can look online.

I buy a soft tofu dessert item with either almond or mango flavour, a cross between pudding and yougart in consistancy, if it is unflavoured try adding some honey or fruit puree or mash up some in it to make it more palatable.

I would think if you make it tastey an small child will eat it with not problem and it is loaded with protein and vitamins, so it is not only good for him/her but a fine way to supplement there protein intake.

Tofu does not have to be cooked. I prefer the extra firm. You can drain the water off, crumble it with your hands, or use a pastry cutter, add celery, pickles, olives, mayo, tamari (NOT soy sauce, taste is way different), nutritional yeast and then use it the same way you would tuna salad. There are lots of great tofu cookbooks on the market. It's very versatile, for instance you can make a great cheesecake with it rather than using cream cheese.
