Makes 25 to 30 cookies

1 cup of softened soy margarine
1/2 cup brown sugar
1/2 cup sugar
1/4 cup soy milk
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
12 ounces dairy-free chocolate chips

Preheat the oven to 350oF.

In a large bowl, mix the margarine, sugar, and brown sugar until it's light and fluffy. Slowly stir in the soy milk then add the vanilla to make a creamy mixture.

In a separate bowl, combine the flour, salt, and baking soda. Add this dry mixture to the creamy mixture and stir well. Then fold in the chocolate chips.

Drop small spoonfuls onto non-stick cookie sheets and bake for 8 to 10 minutes.

Just follow the regular chocolate chip cookie recipe but replace the milk with soy milk and dont put eggs in it. It always works for me and my vegan friends.Make sure to get organic sugar too, cuz regular sugar has bone in it! baking sugar is best.

the best vegan chocolate chip cookies:

2 1/2 cups unbleached, all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup Earth Balance margarine (not hydrogenated margarine)
1 cup sugar
1 Tbsp molasses
1 Tbsp Ener-G Egg Replacer Powder mixed with 4 Tbsp warm water
1 tsp pure vanilla extract
12 oz package vegan semi-sweet chocolate chips (such as Trader Joe's brand)
Step 1:
Preheat oven to 375 degrees.

Step 2:
Combine flour, baking, soda, and salt in medium bowl.

Step 3:
In large bowl, mix together Earth Balance and sugar. Add molasses and mix well. Add prepared egg replacer and vanilla and mix.

Step 4:
Pour in chocolate chips and stir into dough. Drop by rouded teaspoonfulls onto ungreased baking sheet. Bake 8-10 minutes.

Step 5:
After removing from oven, let cookies sit for one minute before removing from cookie sheet. Transfer to wire racks and allow to cool completely. Store in airtight container to retain softness. Enjoy!

ooooor, for chewy cookies with a healthful twist:
Ingredients
3/4 cup canola oil
2 cups sugar
2 teaspoons vanilla

1 tablespoon + 1 teaspoon whole flax seeds
1/2 cup soymilk

2 cups all purp flour
3/4 cup dutch processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips


Directions
Preheat oven to 350 F.

Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.

In a large bowl sift together flour, cocoa, baking soda and salt.

In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.

Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.

Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.

Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

Variations:
For chocolate chocolate chip cherry cookies, replace 1 teaspoon of the vanilla with almond extract, and replace 1/2 the chocolate chips with dried cherries.

For chocolate nut cookies, replace 1 teaspoon of the vanilla with a nut extract (almond, walnut, what have you) and replace the chocolate chips with 1 1/2 cups chopped nuts (hazelnuts, almonds or walnuts all are good).

125g self raising wholemeal flour OR plain flour plus 1 teaspoon of baking powder.
50g soft brown sugar
1 teaspoon of cinnamon
4 teaspoons carob powder
pinch of salt
50g chopped dates
100ml sweetened soya milk
75ml rapeseed oil
1 teaspoon vanilla essence
1 teaspoon of grated orange rind
25g dairy free chocolate(grated or chopped)

line a baking sheet with parchment paper and grease(with rapeseed oil but preferably coconut oil)
preheat oven to 180c 350f gas mark 4

place the flour,sugar,cinnamon,carob powder,salt and dates in a bowl and mix well.
Add the milk,oil and vanilla essence and beat with an electric mixer or fork.
Stir in the orange rind and grated chocolate.

place 12 dessertspoons of the mixture on the prepared baking sheet and smooth the tops with a wet knife.

bake for 10 minutes, cool on a wire rack and store in an airtight container until needed.
