Answers: what are some TASTY foods for the last 3 days, all i've been eatin is salads! please help!

Boca has some really good vegan (faux chicken) nuggets. Boca is in the frozen food section. I like the nuggets with some fries or cut up in a salad. They also have some good vegan (faux chicken) patties which is good on some vegan suitable bread. Boca also have some vegan faux ground beef which tastes good on some taco shells (I use Old El Paso) and you can add salsa or whatever topping you like.
Also Amy's which is also in the frozen food section. OMG!! I love Amy's, they have some really good vegan enchilada dinners with rice and beans, they also have some good vegan bean wraps. And some tasty baked ziti. Amy's is the best.

Also, I like Spagetti. You can use some tomato sauce along with some vegan noodles. I used Hodgson Mills noodles and you can use some Boca faux ground beef and make some garlic toast.

For breakfast you can have fruit, coffee with silk soymilk and I use stevia which is a natural sweetener found in the same grocery store aisle as sugar. Also cereal, like cheerios with strawberries or banana slices and silk soy milk. Also toast with vegan margerine (like smart balance light) or Van's waffles (found in the frozen food aisle) is good.
Lunch you can have a peanut butter and jelly sandwhich. I use Rudy's Organic Bakery Bread. I also like Hormel's vegetarian chili with fritos.

Snacks you can have fruit, veggies and hummus, potato chips, luna bars, etc. Most things that are vegan will say Vegan on them somewhere. Just read the ingredients and make sure you don't see anything like milk, whey, eggs, beef, etc. With time you'll get the hang of it, trust me. I'm new to being a vegan as well. I became a vegetarian in Nov 2007 and a vegan in Jan 2008.
I'm 17, and my parents pay for all my food so I have to get things that are cheap and quick and easy since I don't want to have to cook all the time.

Last night I had steamed pumpkin (Kabocha) with roasted chestnuts and Spectrum's vegan chipotle dressing.
I'm addicted to kabocha. It's a little green pumpkin you find at Japanese markets. You steam it, skin and all. The skin is tender and edible. But when steamed just right it pops off as soon as you stab it with a fork.
Vegan Ruben sammiches are to die for!
I highly recommend some cook books. Sarah Kramer's and/or Isa Moskowitz's.
Make a Vegan Sausage sandwich wth sauteed or grilled onions and bell peppers. Top with either marinara sauce or you can spread vegan mayo and mustard on the bread slices.
Heat up some black beans and add grilled onions, cumin, and cayenne pepper. Serve with rice and salsa. You can also stuff this into a tortilla.
Slice an avocado in half and remove the seed. Remove the skin and mash the avocado in a bowl. Sprinkle in about 1/2 tsp. lemon juice. Mix in 1/2 tomato, seeded and chopped, and a bit of chopped cucumber. Then mix in about 1 tsp. hot sauce or to taste. Serve with pita bread, pita chips, tortilla chips, potato chips, or your favorite veggie dippers.

when you first go vegan its hard until you realise all the lovely food that you can eat, and for convenience there are lots of things like vegan sausages, fake meats, vegan burgers, vegan nuggets. There are also vegan cheeses, vegan mince, tofu.

try roasting lots of veg, easy and goes with rice, pasta!
You need to make sure you get all your vitamins, protein, calcium etc, use the web and look for vegan sites, they have lots of info as well as recipes!
Tostadas and guacamole.
Banana "milkshake" (frozen banana, cup of OJ, 2T agave nectar)
Stuffed mushrooms: Cook bread cubes, onions, celery, and carrots in a skillet with white wine, salt and pepper. Stuff Portobella caps, cover with foil, and bake at 350 for 30 minutes.
Tofu scramble in corn tortillas.
Veggie stir fry is really good and easy. I like carrots and hummus. There are so many great recipes out there. Vegan mac and cheese, sloppy joe, black bean soup, veggie fajitas, etc. Try using an on line resource for recipes. The Vegetarian Times is a great publication and has tons of vegan recipes. The website is full of info as well. Welcome to the vegan life!
in choosing this lifestyle I think its best to do some research so that you won't feel like you are starving yourself to death! there are a lot of great ideas out there veggie cakes, various tofu's to try, curry dishes, experiment with soy cheeses and other products to see which ones you like and how to create them into foods you would want to eat!
how about the old grilled cheese and tomato soup?
just use soy cheese and your favorite organic breads and get yourself some tasty soup! I agree with a lot of the other suggestions. Food books, veganism books, lifestyle books would really help you.

Amy's kitchen (www.amys.com) makes lots of vegetarian and vegan convenience foods. She uses mostly organic ingredients and I can pronounce everything!
Get some dried pasta (check the ingredients), some veggies, some jarred pasta sauce. Cook the pasta per the directions, saute the veggies, add the sauce to the veggies, and throw them together. Sprinkle some nutritional yeast on top.
Stir fries are always good. You can use tofu, tempeh, or the packaged analogues for stir-fries.
Yves makes a soy ground that's flavored wtih taco seasonings. You can make tacos.
Marinate tempeh and grill it. Serve with veggies and rice or a potato.
There are lots of recipes out there for veggie chilis. Find one you like and make that.
Check my profile for tofu tips. You want to freeze and press tofu before you use it in a recipe.
The options are pretty much limitless. Go out there and experiment.
You can make pretty much any dish you could ever think of vegan - just remove or replace the meat, eggs and dairy. Why would you eat only salads? Get a cookbook or two, peruse the internet for vegan recipes. There's a whole world of food out there. Visit http://www.theppk.com and look through the recipe database, or better yet check out the "food porn" in the forums and see how vegans *really* eat.
You need more than vegetables in your diet. Add fruit. Add lentils and beans. Add whole grains. Add nuts and seeds.
Here's a recipe to get you started.
Dirrrty Rice & Beans
1/2 cup canned pinto beans, drained and rinsed
1/2 cup canned red kidney beans, drained and rinsed
1 cup long grain brown rice
2 cups vegetable broth or water
1/2 large red onion, diced
4oz soyrizo or vegetarian sausage (you could even use faux ground beef cumbles)
1/2 tsp cumin
1/8 tsp cayenne
1 chipotle pepper (canned, in adobo sauce) minced
1/4 cup tomato sauce
1/4 cup chopped cilantro (optional)
Combine broth/water in a pot, bring to a boil, reduce to simmer, cover and cook for 30 minutes. You'll stir the rice once when the timer goes off, then cook for another 10 minutes or so.
Meanwhile, steam fry you onion in a nonstick or cast iron skillet over medium heat. When it look soft and pinkish, scoot it over to one side and crumble your soyrizo or sausage into the pan. Brown. Add beans & sitr until heated through. Mix in cumin, cayenne & chipotle and about 1/2 tsp salt. Add tomato sauce and cilantro, mix well. Combine with rice and serve (add more salt to taste.)
Pair that with one of your salads and you have a complete, filling, tasty meal.
