Do you have a good recipe for oat flour bread?!
Answers: I need a recipe that only uses oat flour. I don't want it to have yeast or baking soda, and it needs to be vegan.
Being a former chef and now a vegetarian, one thing about oat flour, like rye and whole wheat it is low gluten so the bread will be very hard and chewy if you do not use some wheat flour.
For a non yeast or baking powder recipe, the people form the Appalacian area and I am not using this term in a mean way but th hillbillys of the area make a salt rising bread, you take a few potato slices, cornmeal and some hot water and make a slurry and let it rest over night and this forms a crude type of yeast like leavening.
You drain off the liquid and mix it with the flours and some type of fat or oil, salt and knead it, let it rise and bake it, I have made it a number times, I will give you a link to a good recipe, and it is all totally vegan.
This recipe is like the one I use the starter can be made with water and a natural sweetener to make the fermented base, even make it an give it 2 days to work.
Maybe you can make pasta. Just put some oat flour in a bowl, add a little water, stir it until it is dough like, put in 350 degrees oven, cook until hard like pasta, let it cool off, and boil like you would make pasta.
