Vegetarian gluten free diet???!


Question: so here's the deal. i've been vegetarian pretty much my whole life. i've also always been really atheletic. swim team, cycle teams ect. so i love my carbs. have always eaten lots of bread and pasta and such.

i've been having a lot of stomach probs the last couple years, and think i finally found the source. it seems to be gluten induced. :( very sad moment for a vegetarian who loves grains. I still crave my carbs. I've tried gluten free bread, but I HATE it!!!! so i keep eating little bits of breads and pastas, and my stomach goes haywire everytime i do. any good snacks/ideas that are gluten free that will satisfy my carb cravings?

I did find these soy crisps that are like rice cakes that are really good, but I want more ideas....

My son is a vegetarian, and gluten-free due to Celiac disease.

Yes, most of the breads suck. They all seem to use rice flour, which has that weird grittiness... We use mostly corn tortillas.

If you live anywhere near a Whole Foods Market, they manufacture their own gluten free products. (At the store in San Antonio they're in a freezer across from the bakery.)
They make breads, pizza crust, biscuits, scones, muffins, pies, brownies, cookies etc. and everything is good.

Soy Crisps (Genisoy?) are good, and the best crackers are Pecan Nut Thins by Blue Diamond. There is a pasta made from rice that is good called "Notta Pasta."

The best cereal I've found is EnviroKids "Panda Puffs."

Regarding quick snacks- Lara Bars are gluten free.

Try making your own bread. Investing in a bread machine is great if you don't already have one plus you save about $3 every loaf you bake at home instead buy at the store. And I'm sure you can find some kind of gluten free pasta at a health food store. Hope I've helped in some way.

Incorporate Quinoa into your diet. It is a complete protein and though it seems like and can be used like a grain it is actually a fruit.

You can among other things make all kinds of breads, pastas, crusts, etc, out of it, the same type of things that you would normally eat if you still ate wheat.

I am a vegetarian, allergic to gluten, wheat, soy, eggs, commercial milk, nuts, beans, and corn, with intolerance to other foods as well. I had to get really creative with my diet. I use buckwheat, quinoa, amaranth, millet, flax, and other gluten free grains to make breads, biscuits, biscotti, cakes, cookies, etc. I grind the grains myself from whole groats to avoid cross contamination issues-most grains are ground on the same factory lines as wheat, making it impossible to get a true gluten free grain-Aarowhead Mills is the WORST for cross contamination-and they even admit it if you call customer service. Its really easy to adapt recipes if you put your mind to it. I make a huge batch of biscotti and crackers at the beginning of each week, and snack on them throughout the day. If you are trying to go completely gluten free, your best bet is to make everything yourself-its not hard once you learn how. Email me if you want some recipes-I can't help if you are looking for commercial stuff, since I react to all of them. I will be happy to share my homemade recipes though. Good luck! (also, keep this in mind-every time you "cheat" by eating one more bite of gluten, you set yourself up for having a really serious, extreme allergic response at some point-every exposure makes it more toxic to your system-unfortunately, I learned this the hard way, and quit breathing after a "cheat")
