Recipe involving tofu, greenbeans and cranberries?!
Answers: i'm trying to think of something i can take home when thanksgiving rolls around. i think i could do something with tofu, greenbeans and cranberries that would be paletable and festive. any suggestions? please note that i am a novice cook so be as exact as you are able.
Make "turkey style tofu!" Marinate a block of extra firm tofu (cut into 8 pieces) in a mixture of 1 part OJ, 1 part soy suace, 1 part veggie stock, along with some dried thyme, sage, and poultry seasoning. Let it marinate overnight. Take the tofu out of the marinade, dredge in flour and bake at 350 for about 30 minutes, flipping them halfway through.
While that is baking, saute:
A rib of celery, diced
One carrot, diced
1/2 onion, diced
1 clove garlic, minced
1/4 c dried cranberries
1 T olive oil
1 t each fresh sage and thyme
Salt n' pepper to taste.
Saute until the veggies are soft. Add in two slices of bread, cubed. Mix thoroughly, spoon over top of tofu. Serve with a side of green beans (Try mixing some silvered almonds and garlic in with the green beans when they are cooking. So yummy!)
Oh my...I'm getting a little sick reading about those ingredients. I like all that stuff, but not together.
