SPICY VEGGIE CHILLI WITH TORTILLA CHIPS;
low fat cooking spray or a little olive oil.
1 onion, chopped
2 garlic cloves, chopped
1 red chilli, deseeded and diced
75g/2 and three quarter oz mushrooms, sliced
75g/ and three quarter oz Quorn mince
1 x 400g can chopped tomatoes200ml/7 fl oz veg. stock
1 tsp yeast extract
1 x 410g can red kidney beans, drained
1 pitta bread, split and cut into 16 triangles
1 teaspoon paprika
salt
to serve:
2 tablespoons 0% fat Greek yogurt
1 tbsp freshly chopped parsley
1. Lightly coat a lidded non stick frying pan with low fat cooking spray or oil. Heat until hot. Add the onion and cook for 5 minutes until softened. Add the garlic, chilli, and mushrooms. Stir fry for 2 minutes.
2. Add the Quorn mince, tomatoes, stock and yeast extract. Bring to the boil, cover and simmer for 15 minutes. Add the kidney beans and cook for a further 5 minutes.
3. To make the tortilla chips, preheat the oven to gas 6/200C/fan oven 180C. Spread the pitta triangles over a baking tray, spray with low fat cooking spray, dust with paprika and a little salt.
4. Serve each plate with a tbsp of yogurt, a sprinkle of parsley, and the tortillas on the side.
LENTIL AND CHICK PEA DASSEROLE;
low fat cooking spray or oil
1 red onion, sliced thinly
2 garlic cloves, crushed
2 celery sticks, chopped
1 tsp cumin seeds
1 x 410g can green lentils, drained
1 x 400g can cherry tomatoes
1 x 410g can chick peas, drained
1 veg stock cube, crumbled
150g/5 and half oz young leaf spinach
1 tbsp freshly chopped parsley, to garnish
1. Lightly coat a large lidded non stick saucepan with low fat cooking spray or oil. Heat until hot. Add the onion and fry for 3 minutes. Add the garlic, celery and cumin seeds and continue cooking in the onion juices for 3 minutes to soften the veg.
2. Add the tomatoes, lentils and chick peas with the stock cube and 150ml/5 fl oz water. Bring to the boil, cover and simmer for 10 minutes.
3. Stir in the spinach and cook for a further 2-3 minutes until the spinach has wilted. Serve hot with a sprinkle of parsley on top.
If you like curry flavours, add 1 tbsp mild, medium or hot curry powder ( depending on your taste ), with the cumin seeds.
you want vegetarian? maybe veggie sausages and mash, with beans/peas. =) Enjoy your meal, whatever you choose.

put some salt and olive oil on bigger mashroom hats, then slices of cheese on it and the all in owen for about 15 to make the cheese a bit orange...
Turn on the owen when you start washing an dpreparing the mashrooms, and make a salad while they are baking.

Pan saute/cook some chicken breasts in butter--season them with a little steak seasoning first. Cook a chicken flavored noodle/rice side dish--Pasta Roni or Lipton Noodles and sauce, and steam some string beans and carrots, or warm up a can of string beans.
