Question: Simple ways to eat vegetables!?
I've recently switched from vegetarian to vegan, and I've found that all I've really been eating is fruit, grains, dairy substitutes, and things like peanut butter and hummus!. I know that I'm definitely not getting nearly enough vegetables, and I'd like to cut down on the dairy substitutes and replace them with veggies!. To sum it up, I'm looking for some simple recipes to help me incorporate enough vegetables into my day!. Things like interesting salads, wraps, sweet potato fries, etc!. Anyone have any ideas!? Specific ingredients/recipes please!.Www@FoodAQ@Com

Try Tofu Veggie Stir Fry!

Ingredients:
Olive Oil
Tofu
Soy Sauce
Steamed veggies of your choice
Cooked rice


Get a frying pan and coat it with olive oil!. Then, put the tofu in the pan and brown each side of it!. Next, cut the tofu up into tiny pieces while it is still in the pan!. After that, add the rice and steamed veggies!. Pour soy sauce all over the stir fry and then mix it up!. Let it sit for about a minute, stirring every 15 seconds!. Then add a little more soy sauce if you want!. Finally, pour it into a bowl or on a plate and enjoy!Www@FoodAQ@Com

I love carrots, red potatoes, onions and broccolli all steamed together!. Has a great taste with a pinch of salt and a tab of butter!.Www@FoodAQ@Com

This is my latest thing to eat: veggie kabobs!. I chop up extra firm tofu, tomatoes, red and green peppers, mushrooms, onions, and a zucchini and marinate them in the fridge for a day in white wine and herb marinade (comes in a little packet from the grocery store!.) Then I put them on skewers and broil them for about 5 minutes and serve over rice!.Www@FoodAQ@Com
