Question: Yummy cake recipe without eggs!?
At my son's day care center, there is a little boy in his class that is allergic to eggs!. I always feel bad when there is a party and all of the other kids are eating cake & ice cream, but he has to have graham crackers because of his egg allergy!. My son's birthday is next month, and I'll be bringing in a cake for the a party, and I would really like to be able to include this kid too!. I asked his mother if she new of any special treats that he could have, and she doesn't have any good recipies either and joked about needing to find a vegan baking cook book!. Does anyone out there know of any cake recipies that taste great, but don't have eggs in them!?Www@FoodAQ@Com

Here is recipe developed during world war two, in response to the rationing of eggs!. My aunt makes a cake like this for my cousin who is vegan, and the rest of us love it too! Good luck!.!.!.


Crosby's Mother's WW II Cake

1 1/2 cups flour
1 cup sugar
3 Tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons oil (assume an oil with no flavor)
1 Tablespoon vinegar (assume a mild vinegar like white vinegar)
1 teaspoon vanilla
1 cup cold water

Preheat oven to 350 Fahrenheit!. Put dry ingredients in sifter!. Sift into ungreased cake pan (8" x 8")!. Make 3 holes in dry mixture!. Pour oil into first hole, vinegar into second, and vanilla into third!. Pour water over all!. Stir with fork until evenly blended!. Bake 35 - 40 minutes at 350 degrees!. you can use apple sauce for the egg portion of the recipe!. measure out the same amount!. or you can get egg substitute at the wild harvest section of your local grocery store, or go to natural food store!.Www@FoodAQ@Com

I have one that is always a huge favorite! It has a funny name, "Dump Cake", but its because it's so simple! In a large cake pan, "dump" in 2 cans of apple pie filling!.!.or you could mix blueberries, cherries, I like the apple best, and then you "dump" a box of Spice Cake mix, the one in the red box, spread it evenly, try to get out the lumps, and then evenly spread around pats of butter , equaling about a stick and a half!. Bake at the temp on the cake box, for about 45 minutes!. That's it and no eggs! Maybe serve with cool whip!. Hope you like it!Www@FoodAQ@Com

No Egg Wonder Cake

INGREDIENTS:
1 3/4 cup sifted cake flour
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
1 1/2 teaspoons vanilla extract
1 tablespoon vinegar
1 cup cold water
PREPARATION:
Sift dry ingredients together into a mixing bowl!. Add remaining ingredients and beat until almost smooth!. Pour into a greased and floured 9-inch square baking pan!. Bake at 350° for about 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean!.
Frost cake or serve with whipped topping!.

6 tablespoons cocoa
2 teaspoons baking soda
2 cups sugar
1 teaspoon salt
3/4 cup vegetable oil, divided by 3

Icing Recipe for No Egg Chocolate Cake

1/2 cup butter
1/2 cup cocoa
7 tablespoons milk
1 pound confectioners sugar
1 teaspoon vanilla
Melt the butter in pot and add the cocoa!. Stir and heat for one minute Pour in a bowl and add the sugar and milk, alternately!. Then add the vanilla and spread on the cooled cake!. If you use round cake pans, spread jam between the layers for a treat!.Www@FoodAQ@Com

If you want to get into egg-free baking, you can get a box of Ener-G Egg Replacer (it's between $5 and $6 a box, and each box is equivalent to about 100 eggs)!. It has an ugly 70s style box and you can find it in the baking aisle!. It's a mixture of starches and leaveners!. You take 1/2 tbsp egg replacer and 2 tbsp water per egg, mix well, and add to the batter!. The stuff also lasts forever!.

You can also use 1/4 cup of silken tofu per egg!. You can find silken tofu in the Asian foods section; it comes in aseptic boxes!.

Or 1 tbsp flaxseed soaked in 3 tbsp water per egg!. You'll want the flaxseed "slurry" to be kinda goopy before you add it to the recipe, so let the seeds soak for a few minutes first!. And keep flax seeds in the fridge or freezer so they don't get rancid!.

You can also get "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz!. And I've seen a few other vegan baking books coming out, but I haven't gotten them yet!. I know Collen Patrick Goudreau has written "The Joy of Vegan Baking!."

I'm personally an Ener-G Egg girl, but any of these should work!. I've tried recipes that call for applesauce instead of eggs, and they just don't come out right!.
