Question: What is !.!.!.!.!.!.!.!.!?
Stearoyl-2-Lactylate !?!? Its in all the bread I can find in my town!!
I am guessing it is not vegan because of (lact)ylate and (stear)oyl
No idea what the 2 is about!.

well, lactic acid is produced by yeast and fungi as well, so it doesn't necessarily mean it's a dairy product!.
similarly stearic acid is a fatty acid present in all saturated fats, so animal fats as well as any saturated plant fats have it!.

so it could be either vegan, vegetarian or non-vegetarian!. depends on the source!.

and the '2' refers to the attachment of the bond!. in this case it is the second carbon of the lactylate molecule!.Www@FoodAQ@Com

Stearic acid is not always animal source; one of the vegan sources is chocolate!. And the "lact" prefix does not necessarily mean it isn't vegan!. Lactic acid is made from fermentation or chemical synthesis of carbohydrates!.

Provision currently exists in the Food and Drug Regulations for the use of sodium stearoyl-2-lactylate as an emulsifying agent in a variety of foods at levels of use ranging from 0!.05 to 2 percent!. Health Canada has received a submission to permit the use of sodium stearoyl-2-lactylate as an emulsifying agent in salad dressings, including French dressing, and soups at levels of 0!.4 percent and 0!.2 percent of the finished product, respectively!. Evaluation of available data supports the safety and effectiveness of these uses for sodium stearoyl-2-lactylate!.

These uses of sodium stearoyl-2-lactylate will benefit both the industry and the consumer by permitting a wider choice of emulsifying agents in the production of foods and by providing better quality products!.

Therefore, it is the intention of Health Canada to amend the Food and Drug Regulations to permit the use of sodium stearoyl-2-lactylate as an emulsifying agent in salad dressings, including French dressing, and soups at maximum levels of use of 0!.4 percent and 0!.2 percent of the finished product, respectively!.

As a means to improve the responsiveness of the regulatory system, an Interim Marketing Authorization (IMA) is being issued to permit the immediate use of sodium stearoyl-2-lactylate as indicated above while the regulatory process to amend the Regulations formally is undertaken!.

So it SEEMS that it is an "emulsifying agent" - evidently approved by Canada - but can't find much about its use within the United States or else where!.!.!.!.!.
