Are you looking for low in bad fat or low in all fat!? I have a great simple, fresh recipe for you but it contains olive oil, which is very healthy!. You can adjust the oil to an amount you can deal with if you desire!.

Greek Lentil Salad:

1 cup brown or yellow lentils, rinsed
1-1/2 cups cherry tomatoes, sliced in half
1 cup green onion, chopped
1 cup cucumber, diced
1 tbs!. dried dill or 1/3 cup fresh chopped dill

Dressing:
1-2 garlic cloves, peeled
1/2 cup!. olive oil
1/4 cup!. lemon juice
1/2 tsp!. salt
1/4 tsp!. ground black pepper

Directions:

Wash lentils until water runs clear!. Put them in a pot and fill with water to cover the lentils, bring to a simmer, partially cover the pot, then reduce heat to medium low and cook for 25-30 minutes or until the lentils are tender!. Set aside!.

Mash garlic and some salt with the side of a kitchen knife until it becomes a fine paste, put in a bowl!. Whisk in olive oil, lemon juice, the rest of the salt, and pepper!.

Once lentils have cooled to room temperature add them to the whisked dressing and toss to combine!. Cut up your veggies and dill and add that to the lentils and toss again until everything is well mixed and coated with dressing!.

you can make chick pea burgers!. Check out tvp (textured vegetable protein) its a good replacement that takes on seasonings and imitates ground beef in recipes and then use it with whole wheat pasta and you favorite tomato sauce and fresh basil!. They have some many good cook books for vegans you should just brows around and pick one you like!. Use a bunch of indian spices and lentils serve over rice!. You just have to get creative!. Why vegan not vegetarian!. Fish is a good - why should you cut that out!? You should not try to go so extreme as vegan because it will be hard for you if you love meat I would go one step at a time with eliminating foods like red meat first, then pork, egg yolks, so you get use to the transition!. Chicken breast skinless is healthy!?!? Don't limit yourself or you will never be able to keep this up,Www@FoodAQ@Com
