You don't need tofu to make pancakes, but if you did, use the Japanese-style that comes in the little boxes and doesn't need refrigeration!. It is very smooth and silky in texture!. I use soy milk, baking powder and egg substitute (found in health food stores)!. French Toast is even easier- a little soy milk, a tablespoon of flour and a teaspoon of vanilla!. Yum!Www@FoodAQ@Com
You would use 1/4 cup silken tofu per egg!. The silken tofu comes in the aspetic boxes on the shelf!. The nutritional information will be on the package!.
You can also use Ener-G Egg Replacer, which has always worked for me in recipes!. It provides a little more "lift" than tofu would, as it has the leaveners tofu doesn't!. I'm an Ener-G Egg person, and I'll use that unless a recipe calls for the tofu!.Www@FoodAQ@Com

Vegetarianism is fine and everything, in fact I know vegetarians are much healthier than I am; but tofu is disgusting!.
Its not even food, it looks like something NASA would use to insulate the shuttles; and later mattress companies would use in their mattresses so they could have "space age" technology from Sweden that molds to your body!.Www@FoodAQ@Com

use tapioca, polenta powder and blend with a bit of water until you get the consistency of eggs then bind with the self raising flour and vanilla extract,add a little more baking powder if you want them to rise a bit more, or you can use regular soy mike or protein (from chick peas) enriched rice milk, then add sugar to taste, tofu's good lightly fried or grilled!.Www@FoodAQ@Com
If you want soy in your pancakes, use soy milk!. I leave out the eggs when I make pancakes!. Just play with the recipe!. It will be fine!. Soy does not coagulate like eggs do, but that doesn't matter!.Www@FoodAQ@Com
