Question: Your favorite original vegetarian recipe!?
Being a new vegetarian (well, pescetarian for now - starting this out in the best way I can!.!.!.no comments please) I would like some veteran veggies to share their yummy recipes!.

this was my absolute all time fave when i was a vegetarian!.!.!.!.!.!.Coronation chicken(quorn pieces)

For 4 people as a main dish use 2 bags of quorn, that makes plenty!

2 bags of quorn chicken pieces
1 very large jar of mayonnaise
2 teaspoons of curry powder
2 serving spoons of mango chutney
1 desert spoon of lemon juice
A good handful of sultanas!.

Cook the Quorn and leave to cool, mix all the other ingredients together in a bowl thoroughly and then add the Quorn!. Garnish with fresh coriander!.
Serve with wholemeal pasta or wild rice, a large crispy salad, poppadoms and maybe onion bhaji!.

I'm not a veteran vegetarian; however, my stepdaughter is a vegetarian, so I have to cook food to suit her on occassion!.

This is my fav!.!.!.Cheese brocolli soup!.

1 package brocolli, cooked, drained and slightly mashed!.
1 stick margarine
1/2 cup chopped onion!.
3 cans condensed cream of soups (choice is yours)
7 cups milk
1 cup cream
1 pound Velveeta processed cheese, cubed!.

In a large dutch oven, melt the margarine, add the onion and sautee until just soft!. Add the milk, cream and soups, blend well!. Reduce heat to medium low and add the cheese, a few cubes at a time, until melted and blended through!. Add the cooked brocolli and heat thoroughly!.

Mushroom tacos!

1 pound mushrooms, quartered
1/2 large onion, finely diced
2 cloves garlic, minced
1 tablespoon olive oil
1 package taco seasoning(I prefer an organic one I get from Whole Foods)
Juice of 1/2 a lemon or a lime
Water or veggie stock
Corn or flour tortillas, based on preference

Heat the olive oil in a large pan!. Add in the quartered mushrooms and allow to cook until they start to brown, about 5 minutes!. Add in the minced garlic and onion and continue to cook until the onions are tender, about 4 minutes, stirring occasionally!. Squeeze in the juice of the lemon or lime (whichever you prefer) and stir in the packet of taco seasoning, making sure to coat everything evenly!. Add in between 1/2 and 3/4 cup water or veggie stock, depending on how much the mushrooms have shrunk down!. Continue to cook until the liquid thickens, about 2 to 3 minutes, taste for additional seasoning (salt, pepper, cayenne) and that's it! Perfect filling for tacos or burritos, and just as tasty and satisfying as any meat taco filling! I'm not vegan, so I top mine with shredded lettuce, a little shredded cheese and sometimes a dollop of sour cream, which is very good, but not necessary because they are delicious on their own! Add some rice and beans, and you've got a complete meal!.Www@FoodAQ@Com

Well, I love my grilled eggplant "manwich"

also, if you have lots of one particular ingredient, go to http://www!.vegetariantimes!.com and search for meals that have that ingredient in it!. That way you are not wasting any foods!.

There are times of the month, when I crave iron, and eggplant is great for that!. Its cheap and bulky and rich in iron!. A good sign that you have enough iron, is no/little dark circles around your eyes!. To look bright eyed, eat plants and grains with high iron!. Plus by eating plants, all that water in them is going to keep your skin plump and young looking!.

A big sandwich for two people
Ingredients:

4 tbs of olive or any vegetable oil, or butter
mustard
mayo
hot sauce
one long ways sliced eggplant – each slice can be about 1 cm in width!.
one sliced green bell pepper
two sliced tomatoes
half thin sliced red/yellow onion
sliced avocados (optional)
whole grain bread, - or any large bread you have

spread the olive oil on each sides of the eggplant

grill the eggplant of a pan!.
Turn the eggplant when the under sides gets golden and soft
In the same pan, add the onions bell peppers
Let the veggie get a bit soft
On the bread spread the avocado
Add the tomatoes
Spread mustard, mayo and hot sauce
And put in all the other ingredients

I respect your pescetarianism but please you're not a veggie if you eat fish, I am not attacking you and thats the last of the subject!.

I personally like Bell Pepper Soup!.!.!. I like to mess with the ingredients some times but:

* ? c olive oil
* 1 small onion, chopped
* 4 large bell peppers (any color!.!.!. but red and yellow are best), seeded and diced
* 1 medium potato
* ?-1 t salt
* 1 t red pepper flakes
* 1?-2 c vegetable stock

Add some chives and/or scallions and they're you go :)Www@FoodAQ@Com
