Question: Can anyone suggest a great but easy vegetarian recipe!?
Got some people coming for dinner, one of whom's a veggie!. Would like us all to eat the same thing though, I'm looking for a relatively easy but really impressive dish!!!.!.!.!.!.!.any suggestions greatly appreciated!.Www@FoodAQ@Com

I have two dishes for veggies that i used to give to my meat eating friends(before i became vegan) and they all loved it!

Coronation chicken(quorn pieces)

For 4 people as a main dish use 2 bags of quorn, that makes plenty!

2 bags of quorn chicken pieces
1 very large jar of mayonnaise
2 teaspoons of curry powder
2 serving spoons of mango chutney
1 desert spoon of lemon juice
A good handful of sultanas!.

Cook the Quorn and leave to cool, mix all the other ingredients together in a bowl thoroughly and then add the Quorn!. Garnish with fresh coriander!.
Serve with wholemeal pasta or wild rice, a large crispy salad, poppadoms and maybe onion bhaji!.

Or Roasted vegetable lasagna

Roast red onion, courgette, mixed bell peppers, mushrooms, tomatoes, all cut into chunks!. Drizzle oil infused with crushed garlic and roast on high for about 40 minutes!.

make a white sauce, and then layer with lasagna, vegetables and sauce, top with grated cheese and sliced tomatoes, and bake in the oven(medium heat) for about 30 minutes!.

Serve with either veg or salad and crusty bread!Www@FoodAQ@Com

Pasta with Peanut butter is soooo good!.!.!.

Ingredients (use vegan versions):

1 pound dried soba noodles or spaghetti
1/8 cup sesame oil
1/4 cup soy sauce
1/2-1 tablespoon sweetener
1 1/2 tablespoons balsamic vinegar
2 teaspoons salt
1 cup chopped fresh cilantro
4-8 green onions, sliced
1-3 tablespoons spicy red chili sauce
3-5 tablespoons peanut butter
chopped peanuts, optional

Directions:

Cook noodles in large pot of boiling, salted water until just tender!. While cooking, prepare sauce: Combine sesame oil, soy sauce, sweetener, vinegar, salt, chili sauce, and peanut butter (I use a whisk)!. Drain noodles when done ( I like to rinse them for this recipe)!. Stir in sauce ( I use tongs), and add cilantro and green onions!. This can be served cold or hot!. Add peanuts to top, if desired!. Very good!

Serves: 6

How about a chili!? Really easy, just throw the ingredients in and you're done!. I use: any type of bean, broccoli, cauliflower, spinach, peas, lentils, tinned tomatoes and tomato puree!. To spice I use flaked chillies (NOT powder, as it makes everything hot!), ginger powder and sometimes paprika!. You can put herbs in as well!. Make sure the beans are cooked before you add them to the chili!. If using kidney or any type of red or black beans from dry, make sure you cook them properly (boil for 15 mins at start of cooking and change the water to cook for 1-2 hours) as they are toxic if not cooked properly!. Then just put all the stuff in a pot cook until the liquid is reduced and it's chili consistency! I like to add tvp as well - when rehydrating put with some soy sauce to make it taste 'meatier'!. Stir fries are good or go for the complete arabian style food with Falafel(can buy as kits in health food shops) hummus (chickpeas,oil,tahini,garlic and lemon juice)which you can buy from most shops readymade but its even more delicious if you make it yourself,Baba ghanoush(baked aubergine dip),Couscous,Pitta breads,tabbloueh and a vegetable tangine

Grilled /Oven baked Veg!.

Use onions, tomatoes, aubergines, corgettes, carrots!. Put them in a oven proof dish drizzle olive oil, herbs, and put in a grill or oven !. You can grater cheese of any kind !.!. or cube some feta!.!. and pop that on top, leave for 10-15mins!.!. and hey presto!.

soy bean loaf
3 cups of mashed soybeans
1/2 cup pecan meal
2 eggs beaten
4 cups cornflake crumbs
1 large onion diced and saulted
2 tab sage
5 tab soy sauce
3 tab olive oil
1 cup water or soy bean water

stir together and put in a cassarole dish and bake 350 degres 50 minutes till brwon and firm in center!.Www@FoodAQ@Com

veggie lasagna!.!.!.!. make like regular lasagna but replace the meat layer with a layer of spinach (and any other veggies you think you and your guests will like!.!.!. carrots, broccoli, etc!. go well)

We all having concerns about nature, climate change and animal extinction!. You wouldn’t feed a lion lettuce or carrots as you wouldn’t feed a sheep meet!. It is all natural for a human to eat meat, why do you want to change it!?Www@FoodAQ@Com
