My fave recipe is vegan banana muffins! Mmm!

My fave meal would be a falafel & sweet potato wrap with a smoothie and some fruit for dessert!.

Potatoes, Peppers, and Onions with Soyrizo
Hopefully you can find vegetarian chorizo in the UK!. also if you want a more earthy flavor use beer instead of white wine!.

Hash In a Flash:

3 TBS!. olive oil
1 medium potato, diced into 1/2 inch pieces ( I use russet or baking taters)
1 cup chopped yellow onion
1 cup diced green bell pepper (capsicum)
3 vegan sausage patties or burgers or "sausage" links, thawed and chopped
1/2 tsp!. red pepper flakes
Salt and Pepper

Preheat the oven to 400F (205C)!. In a medium mixing bowl add 1 TBS!. oil and toss potatoes until coated!. Sprinkle potatoes in a single layer on a lightly greased baking sheet and bake for about 15 minutes, stirring halfway through cooking time!.
When the taters are ready heat 2 TBS!. oil in a skillet on medium heat!. Add the onion and bell pepper and saute for 4 minutes or until tender, stirring often!. Add potatoes, "sausage," red pepper flakes, salt, and pepper!. Cook stirring often until potatoes are lightly browned!. Enjoy!.

This is one of my current favorites!.

Chai Latte Cupcakes (Vegan)

Ingredients
1 cup soy or rice milk
4 black teabags or 2 tablespoons loose black tea
1/4 cup canola oil
1/2 cup plain or vanilla soy yogurt
3/4 cup granulated sugar
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
pinch of ground white or black pepper

For topping:
1/2 cup confectioners sugar
2 tablespoons cocoa powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg or ground mace

Directions
Preheat oven to 375 and line tin with cupcake liners!. In a small saucepan heat soymilk till almost boiling, add tea bags, cover and remove from heat!. Let sit for 10 minutes!.When ready to use stir teabags and thoroughly squeeze to insure as much tea is dissolved in milk as possible!.

In a large bowl wisk together oil, yogurt, sugar, vanilla and tea mixture until all yogurt lumps disappear!. Sift flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, cloves, and pepper into wet ingredients!. Mix until large lumps disappear; some small lumps are okay!. Fill tins full and bake about 20 to 22 minutes until a sharp knife inserted comes out clean!.

Make sure cupcakes are completely cooled before adding topping, or the sugar will melt and not look pretty or powdery!.

To assemble, sift confectioners sugar over cooled cupcakes first, then mix cocoa, cinnamon, and nutmeg together and sift onto each cupcake!. Enjoy!Www@FoodAQ@Com

Chocolate Fudge Cake

4oz (125g) soya margarine
? pint (300ml) soya milk
2 tbsp of golden syrup
1 tsp bicarbonate of soda
8oz (250g) plain flour
2oz (50g) cocoa
8oz (250g) sugar


Melt margarine, syrup and soya milk, except 4 tablespoons, in a saucepan!. Dissolve the bicarbonate of soda in remaining soya milk!. Sieve all the dry ingredients into a mixing bowl!. Add the wet ingredients and mix thoroughly!.

Line an 8" (20cm) baking tin with greaseproof paper or baking parchment!. Pour the mixture into the tin and bake in oven 180C / 350F / Gas 4 for ? hour!. Reduce to 160C / 300F / Gas 3 for 1? hours!.

Once cooled, cover with melted dairy-free chocolate!. Yum!Www@FoodAQ@Com

My favorite is spaghetti squash, with chilies, raisins, pine nuts, kale and zuchinni!. Super tasty with a little coconut oil and homemade french bread with vegan butter and cheese melted on it!.!. yummy yummy!. Oh and a great vegan red wine!.!.!.!.
