What can i prepare for a vegetarian with a spouse who is not??!


Question: What can i prepare for a vegetarian with a spouse who is not!?!?
i'm NOT a vegetarian, but a neighbor is (she just had a baby) and i want to take her and her hubby some food/snacks!. She IS a vegetarian and her husband is Not!. Any suggestions!?
Preferably something simple buy "yummy"!?

Ignore the fish person!. Fish is NOT vegetarian!.

2 tablespoons olive oil
4 cloves garlic, minced
1/2 red onion, chopped
1 green bell pepper, seeded and chopped
1 tablespoon cumin
1 teaspoon ground dry mustard
ground cayenne pepper to taste
salt to taste
ground black pepper to taste
1 (16 ounce) can kidney beans, with liquid
1 (15!.25 ounce) can whole kernel corn, with liquid

Heat the olive oil in a skillet over medium-high heat, and cook garlic and onion until onion is tender!. Stir in the green bell pepper, and cook until tender but firm!. Season with cumin, mustard, cayenne pepper, salt, and black pepper!.
Stir the kidney beans with liquid and corn with liquid into the skillet!. Bring to a boil, reduce heat to medium, and continue cooking 20 minutes, stirring occasionally!. Serve immediately!.Www@FoodAQ@Com

How about a Curried Split Pea Soup!. It's hearty and it would be hard to find someone who doesn't like it!.!.!. vegan, vegetarian, and omnivore alike!.


Ingredients
16 oz dried split peas
1 Tablespoon olive oil
1 medium white onion, diced small
2 tablespoons fresh ginger, minced
3 cloves garlic, minced
8 cups water
1 carrot to grate in at the end (optional)


Spice blend
2 teaspoons curry powder
1 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
2 teaspoons salt
generous pinch cinnamon

Directions
In a large stockpot saute the onions in the olive oil at medium heat for about 5 minutes!. Add garlic, ginger and spices!. Saute 2 more minutes!.

Add the water and stir well!. Add the splitpeas!. Cover and bring to a boil!.

Bring heat back down to medium, let soup simmer for about an hour, until peas are tender!. Grate in the carrot and serve!. You can garnish with fresh cilantro if you have it on hand!.

Serve with naan, pita bread, or crusty french bread!.Www@FoodAQ@Com

you could try stuffed mushrooms!. i know that there are some that are cooked almost like a beefsteak(i think those are portabello mushrooms!. ) the stuffing could be rice based!. could be cheese based or use stale bread or crouons flavored with herbs!. pasta has been mentioned i would think you can't get easier than mac and cheese!.Www@FoodAQ@Com

Indian food is always a good choice since it traditionally doesn't have meat anyways!.

If you are cooking for a vegetarian and not a vegan, go with pizza!. You can buy pre-made dough and sauce at the store!. Add some cheese and veggie toppings and you are done!.Www@FoodAQ@Com

vegetarian lasagna is very nice dish for everybody!. also some vegetarians dont count Fish as meat, so several fish dishes like fish tacos might work too!. eggs is another category that some vegetarians dont count!.Www@FoodAQ@Com

but it's meant for vegetarians!.
