Question: What is your best & easiest vegetarian recipie!?
I've been a vegetarian for about 3 years now, and im looking for a new and easy vegetarian recipe!. (soy milk is preferred)

BLACK BEAN ZUCCHINI QUESADILLAS!!
there delicious
2 pounds zucchini, grated
1? t salt
30 oz cooked or canned black beans, drained
12 oz Monterey Jack, grated
2 green onions, chopped
1 jalape?o, minced
8 eight-inch flour tortillas
olive oil

Toss zucchini with salt in the colander, and squeeze out excess water!.
Combine zucchini with beans, cheese, green onions, and jalape?o!.

Brush one side of each tortilla with oil!. Place four tortillas oil side down and spread each with one fourth of the zucchini-bean mixture!. Top each one with an oil-side-up tortilla!.

To Cook

1!. Fry: place one quesadilla in a frying pan and cook over medium heat for 3 minutes on each side, until golden!.

2!. Broil: Place quesadillas on baking sheet and broil about 1-2 minutes per side, until golden!.

Kidney beans, corn, and red onion combine for a delicious dish that works well with rice or quinoa!. This could also be served as a very hearty soup or chili!."


2 tablespoons olive oil
4 cloves garlic, minced
1/2 red onion, chopped
1 green bell pepper, seeded and chopped
1 tablespoon cumin
1 teaspoon ground dry mustard
ground cayenne pepper to taste
salt to taste
ground black pepper to taste
1 (16 ounce) can kidney beans, with liquid
1 (15!.25 ounce) can whole kernel corn, with liquid

Heat the olive oil in a skillet over medium-high heat, and cook garlic and onion until onion is tender!. Stir in the green bell pepper, and cook until tender but firm!. Season with cumin, mustard, cayenne pepper, salt, and black pepper!.
Stir the kidney beans with liquid and corn with liquid into the skillet!. Bring to a boil, reduce heat to medium, and continue cooking 20 minutes, stirring occasionally!. Serve immediately!.Www@FoodAQ@Com

Wilted Romaine Lettuce

3 small bunches (or 2 medium bunches of Romaine lettuce)
2 medium onions, chopped
2 tsp minced garlic
1/2 lb mushrooms sliced or quartered
Fried, drained bacon bits (optional) or
1/2 lb fried, drained Tofu cubes (optional)


You can fix this in a large skillet or a very large saucepan!.!.!.!.
Saute the tofu separately (or the bacon first)!. Then saute the onions and the garlic and the mushrooms and add the tofu (or bacon)!. Drain off excess frying oil but leave some in for flavor!. Wash Romaine lettuce leaves and separate them!.Put the Romaine lettuce leaves in the skillet!.Put enough apple cider vinegar to go up 1/4 of the side of the skillet , then add water so that the skillet has 1/2 full of vinegar water(ie equal vinegar and water)!. Simmer this covered, turning lettuce as needed with a large spoon!.!.until the leaves are wilted thoroughly (the main vein of the leaves will be slightly crunchy!.!.that is okay!.) If you don't mind, have a look at my 450 vegetarian/vegan recipes (mostly Asian recipes)!. Many of them are real simple, easy and fast, only problem might be you may not get the same ingredients but you can always change it or improvise!.

Like no curry leaves, use basil leaves!. I have lots of soy milk recipes, you can use it to replace coconut milk which is healthier!. Fruit Soymilk shake, i love them!.

Well, I like to saute a little onion and garlic in some extra virgin olive oil!.!. when it begins to get brown, I add a bag of spinach and let it wilt down for a few minutes, then I add some mushrooms on top!.Www@FoodAQ@Com

Hmm!.!.!. I guess the easiest recipe that I use soy milk for would be coffee with soy milk!. It's not much of a recipe but then again, I'm not much of a cook!Www@FoodAQ@Com
