Vegetarianism, Here I am!?!

Question: Vegetarianism, Here I am!!?
I FINALLY have managed to get my mom to let me not eat meat and to buy me veggie meat alternatives/soy products!. Big battle!.
But now I'm at a loss!.!.!.I don't know what to cook! Tonight I'm going to do a simple stir fry, but I can't eat this every night!. What do I do!?Www@FoodAQ@Com

Answers:
You should buy a good basic vegetarian cookbook!. I had one called "Passionate Vegetarian" by Crescent Dragonwagon (ridiculous name, I know) that had a lot of pretty simple dishes, and it was HUGE!. I had it when I was first learning how to cook, and it was really helpful!. also, try not to get too hooked on fake meat things, because they're expensive and don't always taste that good!. Try to introduce beans and other whole foods into your diet, because they'll ultimately benefit you more!.Www@FoodAQ@Com

Congratulations on your coup!

I'll second the cookbook suggestions!. I have several, even though I rarely have cause to resort to them nowadays - usually only when I have to cook something I'm not very familiar with!.

Stir-fry is very quick and easy and cheap and nutritious and tasty, but I'll only make that once or twice per month!.

The other regular and versatile dishes in my repertoire are couscous, rice, tacos, nachos, curries, soups, pizza, pasta, lasagna, ratatouille, salads, sandwiches, baked potatoes, mashed potato and just plain boiled mixed vegetables!. When I get home quite late and can't be bothered cooking, I might just make baked beans on toast or have a bowl of muesli!.Www@FoodAQ@Com

I am eating one of these right now, they are amazing!!

2 tbsp oil
1 onion, chopped small
1 clove garlic, chopped
dried parsley
paprika
chilli powder
cooked white kidney beans
level tbsp flour

Meanwhile, heat 1 tbsp of the oil in a frying pan and fry the onion and garlic for 5 mins until soft and starting to brown!.

Add the parsley, spices and flour, and cook for 1 min, stirring well (don't let the flour burn)!.

Mash the beans with a fork!. Mix in the onion mixture and mash some more!. Season to taste!.

Heat the remaining oil, shape the mixture into 4 burgers and fry for 5 to 6 mins on each side til done!.

You can modify this recipe, as I already did!. I also reccomend that you serve on a bun with lettuce, honey mustard, and cheese!.

oh, p!.s!.: i couldnt give you the exact measurements because i just season it to my liking!.Www@FoodAQ@Com
