Try tempeh!. It's a cultured bean curd that has a chewy texture like meat!. You can chunk it into sauces or stews or fry it up as is!. It comes in a couple of "flavors" in the health food store!. The only good tofu is a fried tofu, as far as I'm concerned!. I do eat it not fried, but enjoy it more fried!. But the Chinese style tofu (in water) firm or extra-firm, and drain it like the other lady said!. Slice it or cube it, then fry till it's crispy brown on the outside!. Then eat as is, or put in a stir-fry!. Beans are very good protein replacers!. Meatless burritos are simple- get pinto or kidney beans and mash them, add a small can of tomato sauce, whatever Mexican spices you like, then slap the mixture in a tortilla with Toffuti sour cream, onions, whatever!. I just made white chili tonight, 1 can each cannelloni beans, great northern beans, garbanzo beans and white hominy!. Chop up one onion, cook it lightly in 1 tablespoon of olive oil, add 1 teaspoon of cumin and 2 garlic cloves!. Add all the beans with the liquid!. Either bake or heat on the stove for 45 minutes!. With a nice, crisp salad it's great (6 gm protein)!.
Get a couple cookbooks, that's how I learned!.
Good luck!Www@FoodAQ@Com

The only thing you're missing in meat is cholesterol and excess saturated fat!. As long as you get enough calories, and as long as you aren't consuming excess junk food, you'll be okay!.
What most people object to with the tofu is the mushiness!. I freeze it to avoid that!. My tips and tricks for getting a good texture with your tofu appear in my profile!. Tofu, after all, is rather bland and takes on the flavors of whatever you cook with it!.
You can also try tempeh, an Indonesian food made of fermented soybeans!. It's good in stir-fries, grilled, baked, sauted, or crumbled into chili!.
Seitan is an excellent meat substitute!. It's made from wheat gluten (sometimes called wheat meat), and it's really easy to make your own!.

Eggs are a great source of protein!. You can make omelettes, poached eggs on toast, etc etc!. If you want low fat eggs get an egg substitute like Egg Beaters!. You can make omelettes, scrambled eggs, and things like that!. Cheese is also a good source of protien!. They have non fat cheese if you are watching the fat intake!. You can sprinkle that on veggies, mix it with eggs, make grilled cheese, etc, for a protien boost!. Milk is also high in protien!. Peanuts and peanut butter have a good amount of protien in them too!.
I don't know much about tofu b/c i don't like it!. but i'm better www!.allrecipes!.com might have some good recipes for you in that department :)Www@FoodAQ@Com

Beans and peanut butter are good sources of protien!. I need to learn more myself as I keep leaning more and more toward being a vegitarian!. No reason I can see for your decision to be vegitarian being wrong!. It's your body, your choice!. Talking with a nutritionist would be great but I personally can't afford one!.I don't even want to find out about tofu!.Best of luck,You're wise to be concerned with your nutrition and general good health!Www@FoodAQ@Com

This is the recipe that made me like tofu!. I promise you'll like it!. It's easy to make, has very few ingredients, and it's a great introduction to tofu!. It doesn't sound like much, but it's incredible!. I have made this for many, many people that have never had tofu, and everyone loves it!. It's easier to get used to tofu when it's in small pieces!.
I have posted this quite a few times, and I apologize to those that have seen this recipe before, but I cannot say enough how great it is:
CARROT TOFU SCRAMBLE
1 pkg firm tofu (see below for prep instructions)
equal amount of carrots (to tofu), grated
1/3 cup soy sauce
2 tbsp vegetable oil
1 tsp sesame oil
sesame seeds, toasted
optional:
green onion
jalape?o
Remove tofu from package and wrap in paper towel!. Place on flat surface and put something heavy on top and leave it to drain for 10 minutes!. You may need to change the paper towel to get as much liquid out as possible!. Once drained, grate tofu, either in food processor or by hand, or even mush it with a fork!.
Heat vegetable oil and add grated carrots, tofu, green onions and jalape?o (if using) to pan!. Fry for about 10 minutes until the carrots are soft and it smells delicious!. Once it's almost ready to eat, add soy sauce!. Be careful if you are using dark soy sauce!.!.!.use less and add more if you need to!. Add sesame oil right before serving and sprinkle with sesame seeds!.
Serve over rice or orzo or couscous or quinoa or anything really, even plain it's awesome, and enjoy!. It's even great in wraps!.
This recipe is great for freezing in little individual containers and bringing to work for lunch!. It reheats very well!.Www@FoodAQ@Com
