I've been a vegetarian for a couple of months now!. I bought this huge book of recipes which pretty much covers my meals but I don't know what to do for snacks!. I don't want to eat junk food!. I'm a pretty picky eater and have a feeling I will get sick of just eating fruits and vegetables for snack, so any other tips!?!?

I'm also in college and can not cook much so keep that in mind!. :)

also, a friend told me people who are vegetarians often gain weight in the first year, is this true!?

I've been a vegetarian for almost 6 years!. Just remember that meat is such a small part of what's out there, there's all this other food that people don't try out!. I would'nt have discovered all the different ethnic foods and vegetarian dishes there are if I were'nt a vegetarian!.

To make quiche: buy a pie crust (hopefully organic :))!. In a seperate bowl, mix about 3 eggs, ripped not chopped spinach, and any cheese of your choice; cheddar works well!. Then put in the oven for about 350 degrees until the crust turns brown and the egg hardens!. You can probably add a teaspoon of salt to the egg mixture for taste!.

For a snack: Pita bread and hummus, granola bars, apples and peanut butter, PB&J sandwiches, or a yogurt and granola!.

Since your in college and, of course, don't want to starve!. Learn how to stir fry Japanese style!. Boil some noodles OR rice, throw on a pan with small amount of oil (preferably Olive oil)and onions, peppers (red, green, or yellow), diced garlic or even powdered, pinch of salt, pepper, and sugar, and the main ingredient: Soy sauce! I make it all the time when I'm hungry and it gets better and better!.

Tip: To save time on the noodles!. Boil the whole batch and store it in the fridge!. It saves time having to boil when you want to eat!.

Some vegetarians gain weight if they don't know what they're getting into and don't know how to cook!. To get full they just eat lots of junk!. That was my mistake!. Fortunetely, I did'nt gain weight or get sick!.Www@FoodAQ@Com

cut up the apples into slices and dip them in PB
-ants on a log
Spread peanut butter on a peice of celery and stick raisins into the PB - one of my faves
-those vegetable baked potato fries!.!.!.
hard to describe but good
-Milk (unless you are vegan)
-Eggs (again, not a vegan option)
-Spaghettios
high in sodium but delicious all the same
-apple segments plain
if you cut them up in segments, then try to assemble it into apple-shape again, then wrap the whole shabang into tin foil!. the apples wont turn brown and its good on the go
-peanut butter crackers
-trail mix
-occasional candy for fun

Well, you'll gain weight if you resort to eating french fries and ice cream instead of meat, which won't happen if you keep eating your fruits and veggies!! :)

Smoothies are good - just drop some spinach and whatever fruits you have on hand with some soy milk and drink away!!

Well my sister is a vegetarian and has been that way for 10 years now!. SHe loves quiche!. i have no idea how to make it but there is tons of recipes online and there is alot of fake meat and snacks out there!. They have taco meat hamburgers hot dogs sandwich meat!. Just look at your local grocery store they have a whole aisle of it!!!!Www@FoodAQ@Com

For the ready-at-hand, I like to keep bagels and bread around—it's surprising how good a simple piece of buttered toast with garlic can be at 3 AM!. also applesauce, yogurt cups, and dried fruit!.

For the slightly more involved but still quick, I love quesadillas!. Fill a tortilla with cheese of your choice, and whatever ingredients you have on hand—I usually use salsa, dried onion flakes, and sour cream (or a real onion, if I can get my hands on one)!. I like to fry it in butter; this is the completely unhealthy option, but you can also stick it in the oven under the broiler or the toaster oven!. I've also been known to microwave them when I'm feeling particularly lazy—if you're not too picky about the texture, that works fine!.

Similarly, for a relatively quick, hot breakfast, scramble some eggs with cheese and veggies of your choice (I like onions, green peppers, tomatoes, and mushrooms), wrap it in a tortilla, and you're on your way!. You can scramble the ingredients in a frying pan, if you have access to a stove, or just scramble the eggs and cheese in the microwave and add the veggies afterward!.

Someone else mentioned stir-frying, and I have to say, that is the quickest and easiest meal I have ever come across, and it is completely versatile—basically any veggies you have on hand will work, and you can get really creative with sauces!. And (best part), make a big batch and store the leftovers in tupperware, and voila! a midnight snack or a quick lunch ready for the grabbing!.
