Vegetarian recipes....any suggestions?!


Question: Vegetarian recipes!.!.!.!.any suggestions!?
I am getting so bored of all the food I make all the time: eg
pasta, mexican (quesidillas), and stir fry!.!.!.I desperately want
some new ideas!!!!!!!!! (and don't bother responding if you're gonna ask why I'm a veggie!.!.!.it's for ethical reasons! and it's not going to change!)Www@FoodAQ@Com

Some really quick and easy things I like to do are

Chickpea Salad:
Boil a can of chickpeas for a few minutes until nice and tender and then drain into a bowl
Dice half a red onion and a whole red bell pepper and mix it in with the chickpeas
Optionally, rough chop some parsely to mix in
Squeeze in half a lemon (and zest it if you really like lemon)
drizzle some olive oil and some balsamic vinegar over the salad
add salt and pepper

Portobello Pizza:
Stem and clean a portobello mushroom by removing the gills
Spread a pesto sauce (store bought or homemade) on the cleaned side of the mushroom
Sprinkle with feta cheese
Bake top side down at 400 degrees for 10-15 minutes
Add or substitutes any toppings
Works with many combinations of different sauces and cheeses and veggie toppings!.
I find portobellos and sundried tomatoes go very nicely together

Avocado Sandwich:
Have a nice sandwich roll such as a ciabatta bun
Open the roll to make a sandwich
Dice half of pitted and skinned avocado and spread on the bottom of the sandwich (will be chunky and not fully spreadable)
Add some sundried tomatoes and a few slices of havarti cheese!.
Close the sandwich
Bake in the oven at 400 degrees for about 10 minutes or until nice and toasty with the cheese melting
Possible other good toppings: Sauteed red onions and bell peppers!.

Quesadilla (I know, but this one is different)
Have 2 tomato tortillas
puree some sweet potatoes and spread on the bottom layer tortilla
make or buy guacomole and spread on the sweet potato
boil some black beans and then embed them in the sweet potato and guacomole mixture
salt and pepper
add the top tomato tortilla
Bake in the oven at 400 degrees for about 15 minutesWww@FoodAQ@Com

Cheese Gougere and Creamed Tomatoes

Sioux Pastry

5oz Pl!. Flour
1/2pt Water
4oz White Flora or Tr ex
4 Eggs
S & P
4oz Cheddar

In pan add water and fat, bring to boil till fat melted, briskly stir in flour and cook until mixture leaves the side of the pan, remove from heat and gradually beat in eggs, add cheese and season!.
Place large spoonfulls of mixture on greased baking tray and lightly press down!. Sprinkle tray with water and bake in mod oven until rissen and golden brown, approx 30 mins!.

Creamed Tomatoes

Blend togther

1 tin Tomatoes
1 Oinion
1 Clove Garlic
Place in pan and simmer until onion is cooked then add
1/4pt Single Cream
Chopped Basil
1/2 teas each of sugar and salt

Vegetarian sausage rolls!.

Buy some vege mince, follow the packet instructions, and make it 3/4 mince, 1/4 boiled rice!. Add a little bit of onion gravy to the mixture to give it a little more taste, but only a small amount!. Don't make it too sloppy, make it so it's a nice sticky mince-like texture!. Then wrap it in pastry like a sausage roll, and bake it :)Www@FoodAQ@Com

There are also a couple of food writers who you may find useful - Rose Elliot is great and Gail Duff!.

Try devising your own recipes too - just think around what you like to eat and try different spices and herbs to create different flavours!. Lentils are extremely versatile and you can use quorn (mince or pieces) as a substitute in, for example, shepherd's pie or bolognaise!.

Falafels (spicy chickpea balls) are delicious warm or cold in pitta bread with salad and mayo or hummus!.
also, if you're fed up with pasta try out some indian recipes like rice dishes (eggplant rice is nice), chutneys etc!. Noodles are very versatile!. Try them with ginger and snow peas!. Red cabbage with Sake on rice noodles makes a great meal too!.Www@FoodAQ@Com

Try some new recipes! Use some new grains: quinoa, millet, kamut, Israeli couscous, wild rice!. Or try some new nuts: cashew, almond, walnut, or pine nuts, in some new recipe with the grains!.

Go to the library or Amazon!.com for some good cook books!. Post punk kitchen has two books out: Vegan with a Vengeance and Veganomicon, that are simply wonderful (easy recipes with lots of taste)!. Candle Cafe is OK too for baked goods and basic comfort foods!. Millennium from the restaurant in San Francisco is a bit fancy for me, but they have some different combinations that I would never think about!. I love looking through vegan cookbooks! Take a couple of hours at Borders or Barnes and Nobel (if in the USA) or some other bookstore in your area!. Sometimes an inspiration will come to you as you read them, and who says you can't go home with the info in your head and not have to pay the $$ for the book!

Plus look to see what may be new to you in the vegetable aisle at the grocery store you go too!. Ever try acorn squash (or any of the other weird looking squashes in the store)!? Or how about purple potatoes!? How about any of the root vegetables!? Not only ginger root, but how about a beet!? turnip!? rutabaga!? or parsnips!? Try your local book story and library!. The internet isn't the greatest place to find a good variety of recopies unless you already know what your searching for!. Most veggie sites only offer a small sampling of veggie food recopies, and they tend to be the same basic ones!.Www@FoodAQ@Com

My Mum got a very nice Lentil Bake Recipe out of one of the Crank's Cook Book (seriously that's what the book is called and NOT me being rude to Veggie's)!.

Apart from Lentils, it has carrot's, onion's, garlic, cheese and egg to find it!. Spoon it into an oven proof dish and fork the top over - then when it has finished baking in the oven (not sure of the temperature) it will have a nice crispy top!.

We have green beans, jacket potatoes and a spicy tomato sauce!.

It can be eatern cold as well!.

My parents and myself are meat eaters, but my 2 cousins who are veggies love it!.Www@FoodAQ@Com
