Answers:
I have eaten young dandelion leaves with salad dressing as a fresh salad!. The older leaves are more bitter!. You can add unopened dandelion flower buds if you want (have not tried the opened flowers raw myself)!.

You can also cook dandelion leaves in a skillet with some vinegar and water as a wilted hot salad or cook them like kale or chard with some dried beans, tomatoes and a little cooking sherry (to help cut the bitter flavor)!. You can can the cooked leaves with some vinegar too!.

You can also cook opened dandelion flowers in some boiling water and add sure jel and sugar to make dandelion jelly that tastes like honey and then save the cooked dandelion flowers and re-heat them in a skillet with vinegar and water and eat them(you can add some minute rice to it if you want for balance)!.

Dandelion leaves are supposed to be high in iron!. I have made the jelly with two different batches and got two different results (one brownish like honey when I boiled the flowers longer and one yellow where I cooked the flowers the same length of time, but not boiling water, just almost boiling water!.) The browner one tastes more like honey than the yellow one!. I guess you have to practice at it!. I water bath canned several jars for 10 minutes, keeping one partial jar back un-canned for testing to see how it jelled and tasted!. Be sure to grab dandelions where the ground is not treated with insecticides or herbicides!.!.!.if there is a lot of them in one place, chances are it is not treated!.!.!.!.

Dandelion Jelly

4 cups (1 qt!.) dandelion flowers
4 cups (1 qt!.) water
1 tsp!. lemon juice
1 box Sure-Jell
4 ? cups sugar

In early morning pick the blossoms!. Wash!. Boil blossoms with water for 3 minutes!. Strain and drain off 3 cups liquid!. Take this juice and add Sure-Jel, lemon juice and sugar!. Boil mixture for 3 minutes!. Skim off top and put in jars and seal!. Tastes like honey!.

The leaves are edible!. You can eat the young leaves raw in salads, though as someone said they are a bit bitter!. Or you can saute or steam the the leaves like spinach and the bitterness disappears a bit!. They are very high in vitamins and minerals and have the benefit of being a blood and liver cleanser!.

Yes, I grow them most years!. Well, of course I accidentally grow the kind in your lawn, but I also grow a French Hybrid that has tender leaves and is a culinary staple for salads in France!.

The kind you will find in your lawn is good but you have to pick it early RIGHT NOW is swell!. Spring is the time to pick the most tender leaves for your salad!.!.!.!.!.but you can pick it anytime!. As long as the leaves are about 4-5 inches - they will taste great as a mixed green with other lettuces etc!.
