Most vegan cookbooks will have simple yellow cake recipes!.

If you have one that's not vegan, most recipes are easily veganized:

Use soy milk for cows' milk in a 1:1 ratio!. If you prefer rice milk, you use 7/8 cup per cup of cows' milk!.

For eggs, there are several options:

1) Ener-G Egg Replacer!. Use 1/2 tbsp Replacer and 2 tbsp water per egg!. Mix well to a goopy consistency before adding to the mix!.

2) Flaxseeds!. Take 1 tbsp flaxseeds and 3 tbsp water per egg, let the flaxseeds soak for a bit, and add to the mixture!.

3) Silken tofu (the kind in the aseptic box)!. Use 1/4 cup silken tofu per egg!.Www@FoodAQ@Com

It's not a yellow cake but I have an amazing chocolate cake recipe that I use even though I'm not vegan!. It is so good! Don't worry it sounds strange but is amazing!.
