Get a box of Ener-G Egg Replacer!. The stuff is rather inexpensive and lasts forever!. You use 1/2 tbsp replacer and 2 tbsp water per egg, mix well until you get a goopy consistency, add to the batter!.

You can also take 1 tbsp flaxseeds and 3 tbsp water per egg, let the flaxseeds soak until you have a goopy mixture, and add to the batter!. Just remember to keep your flaxseeds in the refrigerator or freezer because they spoil easily!.

Or take 1/4 cup silken tofu per egg (the silken tofu is the kind in the aseptic boxes), mash it up a bit, and add to the recipe!.

I've tried recipes that call for applesauce, and it just doesn't work for me!.

Do NOT use Egg Beaters, as they are made from real eggs!.

And vegetarians can eat eggs; it's vegans who avoid eggs!.Www@FoodAQ@Com

Egg substitute should work just fine and they even have a vegan version of it!. It has a similar consistency and on the side of the carton there's a conversion chart listed!. So there's no guess work in how much to use to replace the eggs!. Check with your local grocery stores!.!.!.they ALL have several brands they carry!. My sister is vegan at some grocery stores and health food stores you can buy a repalcement supplement called "no egg"!. Its just a powdeer you mix with water and it works the same as eggs!. So if you need 2 eggs for your cupcakes you just mix up the powder as directed to make enough for 2 eggs and add it in!. it works really well

Vegetarians can eat Eggs!. It's Vegans that choose not to eat eggs! I'm Vegetarian and I sometimes eat eggs but not much cause they are expensive now! So I mix a little cornstarch,& oil plus a bit of baking powder!.!. this is not part of the baking powder normally added when making cup cakes!. My method works for me!Www@FoodAQ@Com

It is designed for baking - so don't attempt to use it to make something like 'scrambled eggs' cause it doesn't work!. :)

I don't know if cornstarch works or not; I've never tried it!.

I usually just replace one egg with 1/4 cup of silken tofu!.
