Stir fry- You need cut up tofu, soy sauce, olive oil, steamed veggies, and cooked rice
Get a frying pan and coat it with olive oil!. The put the tofu in the pan and brown each side of it!. Next, add the veggies!. Add a little soy sauce and put in the rice!. Mix everything up and then let it sit on the stove, occasionally stirring it to make sure it doesn't burn!. After about a minute and a half of that put it in a bowl and enjoy!
Hummus- chick peas, lemon juice, paprika, cumin, black pepper, and any other spices/seasonings you like
Puree the chick peas!. Then add a little lemon juice, paprika, pepper, and other spices!. Then stir!. Serve with a pita, with cucumbers, or on a veggie wrap!.

Vegetarian Cottage Cheese Patties
INGREDIENTS
3 eggs
1 1/2 cups cottage cheese
1 1/2 cups quick rolled oats
3 tablespoons wheat germ (optional)
1 (1 ounce) envelope dry onion soup mix
1 teaspoon dried thyme
2 tablespoons vegetable oil (for frying)
1 (10 ounce) can condensed cream of mushroom soup
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Beat eggs into a large bowl!. Stir in cottage cheese, rolled oats, wheat germ, dry onion soup mix, and dried thyme!. Form into 8 patties!.
Heat oil in a skillet over medium heat!. Place patties in oil, and brown on both sides!. Remove patties to a 9x13-inch baking dish!.
Pour condensed soup into a small bowl!. Stir in 1/2 can of water (or milk) to dilute, then pour over patties!.
Bake in a preheated oven until the soup is bubbly, about 20 minutes!.

Place the tortillas side by side on a paper plate!. Slice tofu, and place slices down the center of each tortilla!. Sprinkle cheese over the tofu!. Cover with a damp paper towel, and heat in the microwave for about 45 seconds, or until cheese is melted!.
Pile some spinach onto each tortilla, and pour on some Ranch dressing!. Sprinkle with Parmesan cheese, roll tortillas around the filling, and eat!.

1 clove garlic, minced
1 (12 ounce) package extra-firm tofu, drained and diced

salt to taste
ground black pepper to taste
2 red bell peppers, halved and seeded
2 orange bell peppers, halved and seeded
2 cups shredded mozzarella cheese
8 slices tomato
DIRECTIONS
Place rice and water in a pot and bring to a boil!. Cover, reduce heat to low, and simmer 45 minutes, or until tender!.
Heat the olive oil in a skillet over medium heat, and stir in garlic and tofu!. Cook about 5 minutes!. Mix in 1/4 cup marinara sauce, season with salt and pepper, and continue to cook and stir until tofu is evenly brown!.
Preheat oven to 350 degrees F (175 degrees C)!.
Using a wooden spoon or spatula, press an equal amount of rice into each pepper half!. Layer rice with remaining marinara sauce, and 1/2 the cheese!. For breakfast eat cereal, milk, and some fruits!. The best cereal is Special K!. For lunch eat a chicken sandwhich!. It should be whole wheat bread and put lettuce and tomatoes on it!. For dinner you could eat meat, chicken, or pasta!. Cook some vegetables to go with it such as corn, salad, carrots, green beans, beets, broccoli, cauliflower, or cucumbers!. You should eat soup before dinner because it gives you a full feeling and you won't eat as much!. And for snacks eat fruits and vegetables or yogurt!. You should try something different each day but remember to look at the nutrient information!. Hope it helps !!
