A typical shopping list for me looks like this:

Rice Milk
Fruit Juice
Fresh Fruit
Dried Fruit
Peppers
Spinach
Broccoli
Seeds (for sprinkling in many meals)
Wholegrain Rice
Marmite
Quinoa
Wholegrain Pasta
Different varieties of dried beans
Baked Beans
Canned Beans
Lentils
Wholemeal Bread
Wholemeal wraps/pitas
Potatoes
Sweet Potatoes
Frozen Veg
TofuYogurt - soy or normal
Oats
Herbal Tea
If any money left over I'll treat myself to soy burgers, sausages etc!.
I don't buy all these things every week; only when I run out!. So dried stuff I don;t have to buy so often!. I don't tend to eat soy every week as I'm not sure how much is too much; I normally have it once every three or four weeks!.
A great breakfast is: plain yogurt (soy is good as well), oats, driend fruit - chopped, fresh fruit (one apple or a kiwi) - chopped, hemp seeds, and some, grated lime!. Yummy!

Edit: tinned tomatoes, mayo, soya spread, and loads of herbs and spices as well! Chili is a must!Www@FoodAQ@Com

Tofu is a great food!. It adds protein to your diet and it is really unexpensive!. I like the very firm type!. You can add it to pasta instead of cheese, stir fry it with veggies, or in soups!. Scrumble some of it on a pan with a touch of olive oil, add diced onions, tomatoes and other nice veggies to mimic some scrambled eggs!. It will really give a boost to your diet for just a couple of dollars!

A lot of people don't like it because they say it is bland, but if you dry it and marinate it with whatever flavor of your choice, it will add that flavor to it!. (like lemon, soy sauce, worschestershire sauce, etc!.)

You can also buy hominy!. It is easy to use if you get the one that comes canned and it is also within a tight budget!. Add it to a veggie soup, after rinsing it with hot water, and it will add carbs to your diet!.

You can also invest in a protein and vitamin powdered and add it to your juices or shakes in the morning, if you drink milk!. They are a bit expensive, but it provides a fast and energy boosting breakfast!.

If you want to gain some weight, buy tortillas, too!. They are rich in fiber and carbs, and unexpensive!. You can put anything in a tortilla!. For example, I take corn tortillas, heat them and then make tacos with fresh cilantro, avocado, lemon and salt and pepper to taste!. That is easily my most favorite food!

Good luck!!Www@FoodAQ@Com

There are some pretty good choices out there for vegetarians!. Boco/Morning Star burgers - there are a few different flavors, fake sasuage patties/links, fake chicken nuggets, veggie cakes (breakfast thing), there is even fake hamburger if you wanted to make something like spaghetti sauce, chili, or shepards pie!. Look at vegetables a little closer!. Pick out the ones you like!. Pasta is always a good alternative!. Pasta with alfredo sauce, cheese sauce, or spaghetti sauce!. Fruits are nice but I don't find them to be that filling!. And of course, we can't forget the infamous salad!.Www@FoodAQ@Com

Hard to just make a list for you when we would need so many questions answered, such as are you willing to cook!.
Remember that foods like Veggie Chicken Nuggets and Smart Dogs are still proccessed foods, so you don't want to rely solely on these types of items, but they are good supplements!.
An important thing to remember is to eat a variety!. This lacks in many diets vegetarian or not!. You want lots of fruits and veggies of lots of different colors!. Making a stir fry with tofu and veggies is a great tasty way to get protien and veggies!.Www@FoodAQ@Com

Make sure you have a basic stock of goods like pasta, rice, couscous and grains!. Maybe some lentils, that are rich in iron and fiber and beans (don't take canned beans with sugar!.!.preferably try the dried ones)
That is pretty cheap so far!.
Add some soy and tofu products to your basket, a few vegetables like carrots, tomatoes, zucchini (they endure in the fridge for a few days) and get some fruit!.
Its okay to buy frozen spinach, sweetcorn and peas and frozen burgers or sausages, maybe a plain pizza base and some cheese, yogurt and milk (soy or whatever you prefer)
Not sure if those 60$ cover all your shoppings like coffee, tea, canned tomatoes and spices, onions, garlic, vinegar!.!.!?
But you should get along!. get a cookbook, or check online for recipes and make a menu for each week!. that makes it much easier to shop and to ensure you get a healthy meal each day!. :)Www@FoodAQ@Com

If you a pure vegan, I would suggest consuming dairy products in addition to your diet!. I think refusing both meat and dairy is just plain silly and not good for your health!. also ingest carbs, they are goodWww@FoodAQ@Com
